My number 1 of my 5 favourite pasta to make. This champion is such a classic dish. Claimed by the Romans as their dish. However it was actually the Neapolitans that came up with this dish, simple pasta tossed with lard, raw eggs and cheese. It became a staple dish world wide.
I prefer egg yolks instead of whole eggs and the guanciale is the go if you want that lard flavour. Having said that you can go with pancetta or bacon if you like. I remember in my college days I use to make this for friend and they would say breakfast in with pasta. Bacon and eggs with pasta instead of toast :)

What you'll need
1 cup of diced guinciale
2 whole egg yolks
1 cup pecorino cheese
300g Spaghetti
Salt for pasta water
Freshly ground pepper to your taste
