Here's your recipe:
1 Head Iceberg Lettuce, Cut in strips
1 Lb Lump or Claw Crab meat
Dressing:
1 Cup Mayonnaise
1/2 Cup Ketchup
1/4 Cup Chopped Black Olives
1/4 Cup Sweet Relish
1 Hard Boiled Egg ,Chopped
Mix all dressing ingredients and set aside. Arrange a good amount of lettuce on a plate and top with 1/4 of the crab (more or less according you your preference). Top with dressing, as much or little as you like. It's that easy!
How to easily hard boil and egg:
Place as many eggs you like (that will only cover the bottom, don't stack) in a small or medium pot (depending on how many eggs you have). Pour cold water over to cover one inch over. Bring water to boil. Once it boils, turn off heat and cover. Let sit 13 minutes. Remove eggs and place in a bowl of ice water to stop cooking. Remove when cool.

Ok, i just stumbled upon your channel, and I so very much appreciate what you are doing! I made crab louie for my fam tonite based on what ive seen out there and my own imagination. Aftewards, i did a deep dive on youtube and there you were... and i kinda wish id found yours first. I guess i presented supermarket louie, which went very well, but my family loves history too. I woulda loved to have served something legit over 100 years old. See? Keep on doin what youre doin!

Jill I have heard of this and read about this but never actually tried it. I’m very curious about what it’s like. Was this a party food mostly, or like an appetizer? It looks and sounds delicious! Love these old recipes so much! I’ve been reading recipes from the frugal gourmet book which is an excellent cook book and also I have been checking our recipes from north country cookbook , which I want to do an episode just on that book because it’s so neat! I think I told you about it before. It has handwritten recipes from all these country cooks and bed and breakfasts and Inns from upstate New York from the 50’s and 60’s. I don’t remember where I got the book but I absolutely love it! I think you would love it too . Happy Saturday friend ❤️

Thank you so much Ryan!!! So this is a classic starter for a dinner or a full entree for lunch. Either way its fantastic!! 😍 I am very fond of the Frugal Gourmet and have all his books. I was an avid fan of his series back in the day. He was so much fun to watch and has inspired me in this series. In his own words...he was a hoot! 😄 Yes!!! I I wish I could see the book, it sounds like pure gold!!! You most definitely should do an episode from it! I will be your biggest fan!! A dear friend of mine just gifted his Grandmother's cookbook to me from 1938 last night at a party and I am overjoyed! I really haven't started really going through it but just flipping random pages, I can't wait!!!! The past has so many stories to tell! Be well my friend!!!! 💖🍸

Did you know way back in old days then the fork intends to be in the refrigerator to keep it cold when it's time for the salad take the fork out and then hold the fork to eat a salad. certainly to keep you cool during the summertime.

This strikes a big, happy chord with me. J couldn't help but share this. :) I grew up in the S.F. bay area in the 60s/70s, when every place that dared to call itself a restaurant had both a louie and Cesar salad on the menu (My dad worked with the Cesar's protege in Toronto in the 60s and the TRUE Cesar, nothing "creamy" is just as much a classic) There is a crab, shrimp or combo (aka seafood Louie). But no other kind of seafood. Then it's just a seafood salad, not a "louie." I cut my teeth on these and am happy to see a resurgence of something that should never have fallen to the wayside. Good is good! :) Here're some tips... The most famous on the wharf was the louie at Scoma's, an amazing, classic, surf and turf restaurant on the end of the pier (43, I believe, 47 is the famous one, it's still there if someone wants to chime in). On the outside it looks ramshackle. Peeling paint, sketchy, to be honest (at least it did). But then a valet offers to park your car and inside it's all high end with world class service and food (best in the states, due to the colder waters, FLA be danged!) In the 70s, our favorite waiter *Giovanni* :) was so successful that he saved enough tips to open a chain of pizzerias across the bay! But I digress... If you're going to make a salad of this caliber, do yourself a favor and DO NOT cut or chop the lettuce. It affects both flavor and mouth feel. Take the extra minute and TEAR the lettuce into bite sized pieces. Any pro salad chef cringes at the sight of cut lettuce in a traditional salad. You'll really like the difference. Also... As well as the mayo, try 1/4c sour cream for that extra bit of tang and try just 1/3rd cup catchup (substitute chili sauce or add a little horseradish to the ketchup for a more authentic taste), then add more ketchup to taste and lighten up a bit on the olives (and I love olives) for a slightly lighter, more balanced taste. You won't be sorry. :D My folks (also prior restaurant owners) and I made louie's regularly, especially in the east bay in summer, when it could reach 114° frequently and as much as 120° and cooking was just not in the cards. And its always a labor of love. Try the olives sliced as an add on rather than incorporated for a more traditional feel, as well as taste. There are a bunch of ways to make a louie, add stuff, remove stuff, I've even seen a "deconstructed" louie (heaven forbid!) Somethings are meant to be pure... Beef welington and a good Cesar or louie salad are no exceptions. This IS a good recipe, pretty true to the original version with minor variances. But PLEASE... don't cut your lettuce! ;D

Thank you and WELCOME!!! Wow, I loved reading this. I have been to Scoma's many years ago and have fond memories. As far as the recipe, I am no stranger to this and have made many versions. For this video, I settled on Snow's because the actual original recipe is no where to be found (that is what I try to create) and everything else is one version or another. I like this one but they are all wonderful. As far as cutting the lettuce, I am quite aware. However, Swan's cuts theirs and so did I. But I agree that torn lettuce is a different experience. And yes, creamy Cesar dressing is not true Cesar dressing, LOL! Just like cream has no place in Fettuccine Alfredo (see my video for that) Thank you so much for sharing your memories!! @@yesterkitchen Thanks for your positive response. Too many people are wrapped up in being defensive about everything here and this is a forum for sharing. :) I know there are many variations. I know Swans, and others, cuf their lettuce (sacrilege). My intent is simply to let people know that one way is not the only way... And with some things, there is the right way and there is everyone else's way. *chuckle* But seriously, I've had louies several ways and the items I mentioned just point back to the classic so that people have a vase for comparison. To me, one great thing about a louie is the contrast of texture, not just the shrimp/crab. Thus is why I mentioned tearing the lettuce, the crunch, flavor and "bite" (mouth feel) of the salad elevates greatly. I'm happy to hear that you have been to Scoma's. I was very fortunate. My parents would take me there for my birthday, we went many years straight. Not many 10-12 year olds could claim that, but... Let's face it. It was a great excuse for my parents to justify a trip to the warf. LOL. We'd also go camp and dig clams and catch crab down in Marshall/Bodega bay, right where they filmed "The birds" just after the movie was shot. Those danged birds beat the heck out of that poor woman. ) I think Scoma's is/was the best restaurant in the city for American surf and turf and their specialty international dishes, too The last time I was in Oroville, where they had the big fires and the issues with the dam spillway busting, we almost, had mom loaded in the car for a last trip to Scoma's (and first in many years) and now that she's 92 and too weak for the trip, I fear those opportunities have passed. BUT, one day, I hope to take my wife and grandchildren. One can dream. :) I'd love to share a big, crab louie with them, then the best steak and lobster west of Bar harbor and best seafood in the country. The deep, cold, Pacific waters produce amazing seafood. Thanks for prompting, and sharing, those memories. That doesn't happen to often. :)

The opportunities may have passed but the memories are gold. That is really why I do this show. To recapture childhood memories through food and learn some history along the way. @@yesterkitchen This started out to be a short reply. Sorry! LOL Yes, we're the same... But different. And that is what it's all about. If we had the same preferences and experiences, then what's the point? Don't misunderstand, I respect and enjoy the things and ways you've written/shown about them, as well. I just tend to be a purist about some things, however I'm not a snob about it. I do not think that my ways are the only ways, simply because they're mine. lol. Unfortunately, there are plenty of that type trolling the waters around here. So, I dont think we're as far apart as I think you think we are... I think. ;) As I said before, my only point from the beginning is that there are origins to every set of variations, such as with a louie salad. I've tried grilled lobster and lobster thermidor (dad let me order it, when I was a kid with an undeveloped palate, icky... lol) but a steamed/boiled lobster with drawn butter, the start of it all, is still my favorite. I've had "steak au pauve" (a fancy name for pepper steak), steak with blue cheese sauce and every other way, too but a simple, seared and basic-seasoned porterhouse, medium rare, sitting beside that simple lobster (maybe a loaded, baked potato on the side) and I'm a happy boy. :) You mentioned your dad and I mentioned the "restaurant" my grandmother and mother ran out of their kitchen . But my father was also the matre'd at the Westbury hotel, the fanciest in Toronto, where he worked with some of the best in the business of that time. He also ran the bar, where the regulars included the likes of Jackie Gleason and his big band and Vincent Price (he'd bounce me on his knee, look down at me with his big head and laugh that unique laugh of his, flashes of which I can still remember today). And my folks had a restaurant of their own, so I, too, got that same foodie "head start," as it were. I grew up in the kitchen with my mom who would cook and bake like they used to on the farm (she had to quit before we all got too fat lol) and she taught me the biggest truth about food. "You can make anything out of nothing, IF you learn the secret of what things taste good together and what doesn't." She taught me to taste things and put those tastes together and to be able to walk into a kitchen, where others had given up and to find the simplest, unrelated ingredients on the shelves, maybe an ordinary piece of meat in the fridge and make a terrific meal, seemingly "out of nothing." It's that kind of ingenuity, inspiration and imagination that creates great chefs. Their ability to take something like a basic, crab louie and make it something unique and suited to their tastes and ideas, so Swan's version was born. :) I wish we were on the same side of the country. I'd love to spend a day in the kitchen with you. :) Thanks again for everything. Good luck and I hope we get to exchange some recipes sometime. I think that would be a reasonable compromise. :) Take care...

Nice history! Any salad is made better with bread, and San Francisco sourdough, sadly, can be had only in San Francisco. Makes me want to take a road trip, and my Dad wasn't real helpful this week. He mentioned 57°F and the need for a pot of something homemade. He still thinks only girls should be in the kitchen, which is fine with me.
