I’ve made the original recipe of this (minus the broccoli) so many times now. I tend to add the red onions and mushrooms at the same time, I find they cook at the same rate. And I pour the sauce directly on top of the onions/mushrooms/garlic, which also speeds up the cooking time a bit. Additionally, rather than thyme I add oregano, I love the taste of it with mushrooms. And I also add nutritional yeast, it adds just a little something more. All things combined this sauce, with its rich savoury flavour, makes me think of a mushroom gravy rather than a pasta sauce. But it still pairs perfectly with pasta. And it’s great on top of baked potatoes too.
@@birb. I can knock it out in about half an hour, but I multitask quite well in the kitchen. If you want to speed things up you could get the sauce blended beforehand and store that in a container in the fridge until you're ready to use it. Then you only have to think about cooking the pasta and frying the mushrooms, which is easier to manage and cuts down cooking time. Also if you have a high speed blender, soaking the cashews first is unnecessary, just throw them in dry, that will speed things up a bit too.
I always feel my sauce is just creamier (even with my Vitamix) if I've soaked the cashews for a bit. Any reason to not soak them after roasting? Appreciate the no oil cooking. Let's be honest, folks who want the extra fat and calories can always add oil, but it's harder to adjust the other direction. Update: So now I have made this, and it's stellar! I browned the cashews. then heated in the oat milk and soaked for 1/2 hour before blending. I also added some protein, vegan of course. Skipped the red pepper, added a little cracked black pepper and used dried thyme. I was out of lemon so used white wine vinegar. It was so yummy! I made half and ate it all! I'm eliminating non-stick cookware (I encourage anyone with health and environmental concerns to do their own research) and just started using my new stainless steel pan. It was great.
I think that sorts out tomorrow night's dinner for me! Great stuff, guys, another eminently tasty and yet simple vegan recipe that makes me glad I switched to full-time vegan.
Love the same-pot use; enjoyed the appreciation -- but not a necessity for -- tamari; would only leave out the open-mouthed chewing at the end. My kid ADORES high-protein high-fibre, and this is a perfect addition to both requests to make the meal incredibly flavoursome.

amazed you get the caramelisation without the oil. We will certainly try this dish. If we are not vegans can we use cows milk to make the sauce? So enjoy all your recipes have tried so many and enjoyed especially the chick pea and tofu recipes. We have never been fond of tofu, but you have changed our minds with your scrumptious recipes. We love all yourplant based vegan recipes even though we are just vegetarians.
I make a very similar dish but instead of tamari I cook the mushrooms in balsamic vinegar and use spinach instead of broccoli. Super easy and delicious!!
Super tasty. I added double the broccoli, and I would halve the oat milk. The dish is delicious, but the sauce has too much liquid. I drained off a ton before serving. Everyone enjoyed it!
Is there a chance you guys have any soup recipes or other recipes to make period cramps less painful? I have looked for recipes and found some online, but I love how your recipes taste and I could really use your recommendations.
This takes entirely longer than 15 minutes, I promise, but it’s still good . The directions “ down below “ it takes a bit of time to figure out the measurements in the US . The video is more clear than the directions because a few things are randomly left out.
This looks great. I don't know about Ireland but in NZ, all the oat milk you can buy is full of SUNFLOWER OIL, wtf? Tasted very creamy so I read the ingredients and there it was, in second place. Won't be using that again!

This recipe is on the top of my list to try! A very nitpicky comment here though: the browning of the onions in the pan ( 1:33 ) is through the Maillard reaction, which is a non-enzymatic process!
