Creamy Cheesy Potatoes grilled on the Weber Spirit
This is a fantastic side dish that’s easy and so darn good.
Ingredients
2 cups new potatoes sliced
1/2 of a brick of sharp cheddar cheese sliced in about 1/8-inch thick slices
10 slices of Fontina cheese about 1/8-inch-thick slices
3/4 of a can of cream of chicken or cream of celery soup
1/2 pint of heavy cream
Black pepper to taste
8-inch cast iron skillet
Enough aluminum foil to cover top of skillet
Cooking spray.
The Cook
Start by setting up your grill for indirect heat about 350 degrees F
Liberally spray the skillet with cooking spray
Put a layer of potatoes on the bottom of the skillet
Spread about half the cheese over the potatoes
Glob some of the cream of chicken soup over the cheese
Grind some black pepper over the top of the soup
Now pour a little of the heavy cream over the top
Repeat for another layer of everything.
Put the last of the potatoes over the top and a little bit of the soup over that.
Cover everything with the aluminum foil
Put on the indirect side of the grill and cook for about 1 hour and 15 minutes or until the potatoes are soft.
Let cool for a bit and serve with some good burgers, fish, opossum, or whatever you can come up with.
