The custard is often smooth and creamy, with a rich vanilla flavor that pairs perfectly with the sweet bread. I must say, this Bolo bao I've made/had is an absolute triumph in taste! The crust, bread, and filling come together flawlessly, offering a divine symphony of sweetness, flavor, and texture. Each bite of this delightful treat truly feels like a heavenly experience.
Storage: NEVER refrigerate bread! These buns are still scrumptious on the second day. For longer storage, freeze them. Microwave each for a few seconds in the microwave then bake at 300F for 5 minutes. It would taste almost as good as fresh out of the oven. :)
Makes 16 small buns
Custard Cream Filling Ingredients:
Whole milk ¾ cup
Butter 2 tbsp
Egg yolk 2
Sugar 3 tbsp
Cornstarch 2 tbsp
Vanilla extract 1 tsp
Bread Dough Ingredients:
Bread flour 2 ¼ cup + ¼ cup as needed
Half and half ⅔ cup, warm (substitute with half heavy cream and half whole milk)
Sugar 2 tbsp
Unsalted Butter 2 tbsp
Salt ¾ tsp
Egg 1 large
Active dry yeast 1 tsp
Warm water 2 tbsp
Cookie Crust Ingredients:
All purpose flour ¾ cup
Cake flour ½ cup
Sugar ⅔ cup
Unsalted Butter, softened 4tbsp
Lard, softened 3 tbsp
Baking Soda ½ tsp
Baking powder ½ tsp
Salt ⅛ tsp
Eggs 1 large
Vanilla extract ¼ tsp
Almond extract ⅛ tsp
Egg yolk wash: 1 egg yolk + 1 tsp water

0:30 - Custard filling
3:55 - Bread dough
6:37 - Cookie crust topping
10:15 - Individual buns
14:41 - Mark the top, brush with egg wash, and bake

We have tried this twice now. It’s delicious but still cannot get the cookie topping right. It’s melts too quickly and browns too much by 15 minutes.
