As a chef myself nothing irritates me more than not giving a prop to the guy who created this recipe and you copied it to the gram/millilitre and then taking credit as if you came up with it . This one is from the great Heston Blumenthal @stefan catherasoo , check other videos of Heston , the guy is a scientist in an aprint and a very good teacher/mentor .

Yes and yes! I would remove a portion (maybe a cupful) from the pot, blend the rest, then add the reserved portion back in for some texture. I just recently rediscovered how darned good mushrooms are.
Dear chef plse HELP, son is bringing his girlfriend home who can not eat onions and garlic, and I can't bear the thought of making casseroles in winter visits, minus the flavour the humble onion and garlic give? Do you have substitute foods you use chef with food allergies like this? I'm at a loss, we have improvised but are sick of steak or Salmon and want our tasty casseroles back. Any suggestions will be appreciated. Thank you.
The best thing for this would be to use chives as replacement is she can eat that. If not it can be left out completely and go heavy on carrots and celery as a replacement. If using carrots and celery, cook them down to the point they start to heavily caramelise. You can also add finely diced potato and caramelise that too. These three together will create a delicious blend of flavours and whilst it might not be the onion and garlic flavour it will still be delicious. Chef Jack......would you like to trade places with me ? I have been in hazardous heat levels since yesterday and advised to stay in my air-conditioned home. Relief is coming by Saturday but in the meantime I'm watching enjoyable videos such as yours. I can't decide if I like mushrooms---sometimes I do, other times not. I'm equally indecisive with capers.
