CREAMY TUSCAN SALMON
Adapted from Cafe Delites
2 teaspoons olive oil
4 salmon fillets, skin on
2 tablespoons butter
6 cloves garlic, finely diced
1 small yellow onion, diced
½ cup dry white wine (or chicken stock)
5 ounces jarred sun-dried tomatoes, drained
1 cup heavy cream
¾ cup whole milk
Salt and pepper to taste
3 tablespoons capers
3 cups fresh spinach leaves
½ cup fresh grated parmesan cheese
Minced fresh parsley for garnish
Heat the oil in a skillet over medium-high heat. Season the salmon filets on both sides with salt and pepper. Sear the salmon skin-side down first, gently pressing fish flat to get a good sear. Cook skin-side down for 4 minutes; gently turn over and cook for 1-2 minutes or until fish is cooked and flaky. Transfer to a plate or tray and cover loosely with foil. Melt the butter in the pan and saute the onion until tender. Then stir in the garlic; stirring until it becomes fragrant. Stir in the white wine to deglaze the pan. Add the tomatoes and capers; cook and stir for 1 minute. Reduce the heat and stir in the heavy cream and milk plus salt and pepper to taste. Allow to simmer for several minutes. Stir in grated parmesan; taste for seasonings. Stir in the spinach allowing it to wilt for about 2 minutes. Add the salmon filets back into the pan, spoon the sauce over each filet. And serve alone or with pasta or rice. Garnish with parsley.

This might be a really good recipe; I think I'll save it and give it at try. But to make it my own I would probably not have the heat as high when I cook it. I'll briefly cook the fleshy side first, omit or greatly reduce the capers since I'm not a big fan, and I would probably plate my salmon and spoon the sauce over it and to the side since I like my salmon skin crispy. I watched the entire video. If you press the "Show More" button in the description (I forgot to press it first this time), you have the entire written recipe. Looking forward to trying this recipe. Thanks for posting it.

Thanks for the video. I don’t mind the talking at all I like to get ALL the pointers lol. Plus she’s a super sweet lady. I’m gonna try this but as a sauce over pasta with the salmon on top....And shrimp 😉

I agree. There are many people that don't know why things are done the way they're done. For years I didn't know you need to let meats continue to cook so that they "release". You'll end up with a big mess forcing the meat. Let the process work!

Yeah, yeah, yeah, get to the point...Actually, the written recipe in the description is great for seasoned cooks like myself so you're off the hook for the 20 minutes on how to cook salmon.

Give her a break, this recipe kicks ass. She’s the definition of comfort. The capers make the dish; to me, they have a mustard like flavour.

Beautiful Dish!! 🙌🙌💓💓 Can you put in Artichoke Hearts?? Also..when deglazing.. can you also add chicken broth.. along with the wine..(so you’ll Have more Flavor plus sauce)?? Looks Elegant!! You could also use this with Chicken too!!💓💓

Wow! It really looks delicious but do you have to add capers? Is there something else that you can add instead? I am going to try this recipe tonight because I am buying salmon on sale for 11 dollars for 4 pounds.

I agree with everyone there was way too much talking and you should definitely prep before you start taping so you have everything ready to go. The lid thing could’ve been edited off the video not necessary, as well as the pause like you’re going into a commercial break. The video just dragged. The recipe was delicious though.

Pro tip: talking "more than what’s necessary" helps in digestion, works very well with salmon in the Tuscan sauce.

FYI, anything you cook you should put presentation side against the clean pan. Meaning, you should have cooked this flesh side down first. Skin side down doesn't prevent it from curling, if anything, it would promote curling.

I've made this dish. And is really quick and easy. However, too much talking and made it sound complicated. is a 10 min 15 the most dish. DELISCIOUS look it up on google quick version

Instead of all that rich fatty milk and cream, use coconut milk. Add a bit of ginger. Yummmmy. All the cooking could have been done in half the time.

Do not cook skin on salmon like this. Her pan was way too hot for fish (Somehow she didn't burn the skin). Do not rest it skin side down with foil - Do not finish it in the sauce (crispy skin was ruined). Also, there is nothing Tuscan about this.

Butter Bean Hahahahaha you are correct there. I do not know why she called it Tuscan, I can call it Creamy Sundried Salmon! No good recipe. I’d rather have Seared Salmon with Herb Butter Sauce I like crisp salmon skin hehehe. Cheers!
