This dish is great for when the days are getting a little cooler. The cream gives it a little luxury while the cauliflower 'rice' is an awesome little recipe that is healthier than regular white rice and keeps it low on carbs.
You could use a meat that you're more familiar with for this meal, like beef, but we love to try new things...especially when they're in season.

Made this last night with moose instead of venison and it was incredible! The flavors from the mushrooms and bacon go really well together with the sauce. Just a heads up though, in the video Ben says to use a tablespoon of tomato puree but on the website, it only says half a tablespoon.

I made this dish yesterday - it came out really scrumptious and was very easy to cook! Although, I did it with some minor changes - I used Sherry instead of Brandy, the cauliflower was cooked in the covered pan using some parsley butter and I didn't find necessary to put bullion block, since the meat already has a notorious taste (let alone other taste-makers, like onions, bacon and garlic). The result was a great success.

Since my father is a hunter we have a lot of venison, but he prepares it the same way every time. Thank you so much for this recipe, I'll definitely try it the next time to have a bit of variation!

Because it's not cooked for very long, a good, marbled steak would be great if you caramelised it really well. Flank might be good too, if you're looking for something slightly cheaper.

here in sweden we eat venison a lot (at least my family does). my grandma makes the best venison stew with fresh potatoes. we also have dried venison heart (at some places) and it's surprisingly good :)

Loving this dish. Will definitely use the cauliflower "rice" in the near future. Also, I think it might be even tastier if you fried up the mushrooms in some butter on a separate pan, instead of just boiling them in the stew.

I come from an American hunting family so venison frequently provided the meat for the available meat for the family. Venison stew was a frequent dish. We found that the addition of sweet potato chunks was wonderful. It started with dumping in left over candied sweet potato’s from Thanksgiving (!) to bulk out the stew and they became a standard ingredient plain or with the brown sugar.

I am missing prime time venison season back home in Wisconsin but it's reassuring to know that there will be freezers full of it and people willing to give it away by the time I return and I will be able to try this bad boy out. I'll report with the results!

Made the cauliflower rice for a low carb curry I made. Tastes great and an amazing rice replacement for soaking up all the souce.

Watching the boys' old videos. It's interesting, living in the US and having deer hunted all my life, hearing someone say how expensive deer meat is. Around here only snobs call it venison lol. For us, managing 3 or 4 deer a year (5 this year thanks to a land owner buddy of my dad's aka free) we always had deer meat in the freezer. When money got tight, throw on a roast, or a stew, or tenderloin medallion steaks. A tag costs about $15us and when you process your own meat, you get easily 50lbs. This year I learned how to make deer bone broth, so there's even more bang for my buck... pun intended. 4 forelegs can easily produce two or more gallons of broth with minimal to moderate fuss. It's great! Just strange hearing someone talk about venison as being expensive. I know it's not whitetail there, but glad you boys get to experience it occasionally.

Yup, in the microwave with the cling film... It doesn't melt it, it keeps in all the moisture and the flavour :-)

Yep or steam... just make sure you drain it well otherwise it gets a bit soggy

Don't see why kangeroo wouldn't work. It's usually pretty lean meat so would work nicely with this creamy sauce. Simple stock would also deglaze the pan.

I don't eat venison due to my beliefs, but I'm glad this can be done with beef too, so I can try it. It looks really delicious and nourishing, and the cauliflower 'rice' seems like a great way to present some veg to a picky eater.

I'm native Canadian (Anishinaabe), and my family is deer clan (Waawaashkeshi). There's a cultural taboo about eating your clan's totem, due to spiritual connection. Some are less strict about it these days, and my dad will eat both deer and moose, while I personally choose not to partake in either.

ixekun You could steam it! If you've got a sieve or similar then just put it over a little boiling water in a pan, stick a lid on it and steam until just soft (maybe 5-10 minutes depending on how big your cauliflower bits are).

Could you guys do something with cooking in Belgian Special Amber Ale? I like Pilsner, but Belgian Ambers have so much more taste. There must be something that you can cook with it.

I doubt it. You would probably be better off doing some kind of stir fry with the chopped cauliflower. The brandy can really be replaced with any liquid I think. Brandy just has good flavor.

Did you chuck the cauliflower rice in the bowl with plastic wrap on, while microwaving? Wouldn't that melt the plastic wrap, especially if you have the microwave on high..?

does the minipimer work to process the cauliflower? as as student away from home I have no food processer with me, but I would try this recipe to see if I can eat cauliflower (I usually don't like it at all :D)

i would put it on a double boiler... basically a metal bowl on top of a pot of boiling water and just get it heating! :) ... add some garlic for extra flavours, it'll taaste nicee...

Which cut of venison did you use in the video? On the recipe it says "diced venison". I'm a little concerned that it actually needs more like an hour or two to tenderise and cook, not 15 minutes as the recipe says. Or do you need to use a cut from the deer that doesn't require long slow cooking?
