Bánh Xèo is a Vietnamese savory crepe/pancake, typically loaded with pork, shrimp, and bean sprouts. It is eaten with fresh herbs and lettuce. The crepe itself is very basic, so most of the flavor comes from the filling and the dipping fish sauce (look for recipe in my Vietnamese egg rolls video). The name comes from the sizzling sound the batter makes when it hits the hot pan.
Bánh Xèo
1 cup (145 g) rice flour - not glutinous rice flour
2 Tbsp (15 g) cornstarch
1 tsp salt
1 tsp sugar
2 tsp turmeric
1/2 cup (4 oz) coconut cream - can sub with coconut milk
1/4 cup (2 oz) light beer or sparkling water
1 1/2 cups (12 oz) water
1-2 chopped scallions
Filling
8 oz pork
1 pound peeled and deveined shrimp
bean sprouts
sliced onions
Vegetables, fresh herbs and dipping fish sauce for serving
DIPPING SAUCE
1/2 cup hot water
* 2-3 Tbsp sugar
* 2-3 Tbsp fish sauce
* 1/2 - 1 lime
1 Thai chili, sliced
2-3 garlic cloves, minced
