Crispy Cornflake Chicken Tenders
Ingredients
2 pounds boneless skinless chicken tenderloins
3/4 cup flour
pinch of salt and pepper
2 eggs
1/4 cup milk
2 cups crushed cornflakes
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp smoked paprika
Instructions
In a shallow dish combine flour with a pinch of salt and pepper. In a second shallow dish whisk together eggs, milk, and pinch of salt and pepper. And in a third shallow dish combine cornflakes with spices and a pinch of salt and pepper. Cover a baking tray with aluminum foil and place a cooling rack on top. Spray cooling rack with non-stick spray. Take each chicken tenderloin and dredge in flour, then egg mixture, and then cornflake mixture. Place chicken on cooling rack. Spray all the chicken with non-stick spray. Bake in a 400 degree oven for 20 to 30 minutes until chicken is cooked through.
Dipping sauce: Mix together 1/2 cup mayonnaise, 2 tbsp mustard, and 1 tbsp of honey.
