Ingredients for 1 loaf (6 slices)
1.50 cups (about 200 g) bread flour
2 tablespoons (25 g) sugar
1/2 teaspoon (3 g) salt
2 tablespoons (10 g) unsweetened cocoa powder
1 teaspoon (3 g) instant yeast
1 large egg (about 50 g)
0.5 cup (about 118 ml) warm milk (120°F/ 49°C)
1 tablespoon unsalted butter (14 g)
White candy/ chocolate button and edible pen to draw the eyes and nose
Bear shaped baking pan dimension: diameter: 5.9” (15 cm), height = 3.5” (9 cm)
Summary:
First rise: 60-90 minutes depending on your room temperature
Second rise: 40-50 minutes or about 85% of the pan
Bake 375°F (205°C) for 30 minutes (preheat to make sure the oven is hot)
1. Mix the bread flour, sugar, salt, cocoa powder and stir.
2. Add yeast and stir. Add egg, warm milk and stir until combined.
3. Put on hook attachment in stand mixer and start to mix the mixture. You can also hand knead.
4. When the dough comes together, add butter. When all the butter melts, the dough will be a bit “wet”. Continue to knead until the dough is smooth, shiny and springy (elastic), about 20-30 minutes by machine.
5. Take a stretch test. When the dough can stretch without tearing, that means the gluten is well developed and the dough is ready for rising. If the dough tears, knead the dough for a 1-2 minutes and test it again until it is ready.
6. Spray oil/ grease inside a bowl. Transfer the dough into the bowl, turning it a few times to make sure it is coated with oil. Seal and place it at warm place to rise for 60-90 minutes or until double in size.
7. Degassing the dough. Punch down the dough to remove the air bubbles. Weigh and divide it into three portions: 1 big (80%) and 2 equal small (10% each)
8. Shape each portion of the dough and transfer the dough to the greased baking pan.
9. Cover the pan with a cloth and let it rest for another 40-50 minutes or until the dough has reached 85% of the pan.
10. Transfer the pan to the oven. Weight it down with a heavy heatproof tray on top to prevent the dough from rising out of the pan. I use CorningWare casserole dish.
10. Bake in a preheated oven at 375°F (190°C) for 30 minutes.
11. Let it cool down before slicing and serving.
NOTES:
*If you would like the bread in white, just skip the cocoa powder.
*Please preheat the oven so the oven is very hot when the dough is ready to bake.
*I weigh the ingredients and convert the measurement. Flour is based on scoop and sweep with a leveler method.
