Hello! TCM (Tinted Curing Mix) is a special spice blend used in some curing processes.

I believe parfait means “perfect” in French, and that traditionally making chicken liver parfait meant straining the mixture to ensure it would be perfectly smooth. But with the Vitamix, the mixture purportedly come out so smooth, meaning that no straining is required.
