I've been living in Philly 20 years and have had my share of cheesesteaks. I have literally never heard anyone, anywhere refer to it as "cheezer"

@@Junglehunter677 no provolone or American cheese (American cheese in Philly cheesesteaks are not yellow or taste fake) and don't USE KETCHUP I'm from Philly that is disrespectful:C You just say a Philly cheesesteak and usually they get you one with American cheese and goodness but you can ask for something else Franks shakes and steaks are the best ones to get in my opinion and others most reviewed one in my area. Also in Philly, we don't call it Philly cheesesteak it's just a cheesesteak because we are already in Philly. k bye now

Lived in South Philly, 4 blocks from Pat's & Geno's for almost 15 years and never heard a cheese steak called a cheezer. Don't stress about ordering the "right" way, the key is to know what you want so you don't hold up the line. Mike, your sandwich looks great!

Ohhh! I went to Pat's when I was in Philly a few years ago. Being used to dry, sad cheesesteaks elsewhere, having the real deal was like a religious experience. I need to go back to Philadelphia someday to hunt down yet more cheesesteaks.

You want some cheesesteak history? Here ya go! The original steak sandwich was invented in 1930 by a hot dog stand vendor in Philadelphia named Pat Olivieri. One day he sent his father to the local butcher for some Ribeye trimmings and decided to make a sandwich out of them with grilled onions on a roll. A cab driver who ate hot dogs everyday asked to try one and said "forget hot dogs, you need to start making these". Sometime later in the 1940's "Cocky Joe" Lorenzo, a drunk employee of Pat's, decided to put provolone on his steak sandwich and the cheesesteak was born. In 1953 Cheese Wiz was invented and Pat Olivieri said this is tasty and cheap and decided to offer it as an option to put on his cheesesteaks. Putting peppers on a cheesesteak is an abomination.

Watched this 10 month ago first time. RU-vid just recommended again. rewatched. I had a pretty adictive relationship to my new all time favorite sandwich at first. Now eating them just once a month. I am livin in germany. Not to hard to find rolls like this here. Cheese same story. One small own style i developed is to lay the roll over the meat and cheese for a minute instead usiing a lid. Givin the bread a slight roast on the edges and warms it up. Also the cheese glues the meat and roll even stronger together over the time it melts. So the handling in the hot pan is a bit easier for me. TY so much for sharing this amazing sandwich with us. Else I probably would ve never heard of it over here in europe

I made these rolls using your recipe exactly. They were excellent! I'm new to breadmaking so was thrilled with the results. The Amylase enzyme really makes a difference.

If you are familiar with the channel and this series, you know what high standards of quality are used to make these sandwiches and guests from RU-vid like Alex the French Guy have visited and approved. That being said, everyone has their own individual tastes and if someone wants to use ketchup on their sandwich or mayo on their fries who are we to judge?

Towards Allentown they will serve the steak caramelized with (tomato) “sauce”. Since you add the ketchup you might try that way, very good!

They call it valley style(Lehigh valley) and you get marinara and usually mushrooms onions and hot/mild/sweet peppers. Usually provolone. Better than Philly by far! Don't use ketchup you fuckin kooks

From Philly just wanted to share some thoughts: 1. That cheesesteak looks amazing! 2. Pats and Genos, the two most famous spots in Philly, are both pretty bad and are tourist traps 3. Jims is definitely better than Pats and Genos and a solid spot to go 4. If you want the best cheesesteak you gotta hit up Delassandros

SundayMatinee I’m from philly as well and I personally eat my steaks with ketchup. Either way is fine, anyone tryna be a purist about fucking ketchup is just gatekeeping. There are a few things integral to a cheesesteak and choice of sauce is not one of them.

He's right that the people taking your order for a cheesesteak can have a serious attitude ... but who cares what they think. Let them make faces. All this proper ordering cadence is just BS. If you say "cheesesteak with onions" instead of "one with" ... they'll figure it out. Order any way you want --- don't be intimidated by some rude jerkoff in a window.

They don't do it to be rude, they do it so business goes by fast, as you can tell, the dude even said they can get up to 2.5k sandwiches sold on a Saturday, and if some slow ass person takes an extra 2 min to order because they have to ask who wants what or how to order what, yeah, they're gonna get pissed, but if you say what you want loud and clear, nah, they ain't gonna mess with ya

I'm not saying to be that doofus who doesn't know what he wants when he gets up to the window (that makes us Bostonian's crazy too)... but the guy in the video is advising that you rehearse your order before getting in line. I don't really care about the lingo and I'm not concerned what the guy in the window thinks either. If I say "cheesesteak no onions and American cheese" ... he'll know what i want. If he makes a face because I didn't say "one without and american" who really cares. If I was gonna give advice to people visiting Philly .. it wouldn't be about - how - to order ... it would be - where - to order. Skip Ginos and Pats and Tony Luke's and go to Joe's in Fishtown. Better food and nicer people.

thanks man, it's a tricky game though. This exact show that you see here can only work on RU-vid because I create, produce, edit, host, cook everything myself. So I know this is video is over a year old, but I had never really heard about directly adding amylase to bread dough until watching this video. This makes PERFECT sense to me as a homebrewer where we deal with controlling the activation and viability of alpha and beta amylase as a part of the mashing process to convert starches into fermentable sugars. The fact you can straight up purchase these enzymes for use in things like bread making just blew my flipping mind.

My intro to the philly cheesesteak was in Thailand by a New Yorker. He did the pepper thing but did tell me that a proper one was very hard to find outside Philadelphia as the rolls were almost unique. Have tried doing my own but sadly had to sriracha my inadequate attempt. Nice video guys.

This is serious. I remember the story of a particular NYC bagel shop that opened a store out in LA. They made the bagels fresh using the same recipe and everything, but try and try as they might, there was something off about the bagels. After much experimentation, they discovered it was the water. California water has a different taste to it than NY water. In order to get that NY bagel taste, they had to fly water from NYC out to LA, because the California water didn't provide that same taste. And I know, I know, "What? Water doesn't have a taste. It's water." Yeah, try drinking tap water in Florida, then come back and say that. Yes, I know, it's not the actual water itself but what's inside the water from the purification process. Point is, water from the tap can taste drastically different regionally, and that can affect the outcome of food that uses water, especially in baking.

Everytime i make cheesesteack i always put my meat on a super hot pan for less than a minutes to give it some intense color without cooking it all the way, then i put my almost done onions in, turn te heat low, shape it and put the cheese. The time it take for the cheese to melt will be enough for the onions and the meat to be perfect. I think the meat brownage really makes the final product better.

This is a legit recipe. Jim's is the best. as a former philly resident of 6 years, you can put ketchup on if you want. Every place and food truck will offer "salt, pepper, ketchup" and often hot sauce after serving it up.

As someone else from just outside Philly and now living in Switzerland this is much appreciated. Thanks for putting into the research! Hopefully I can find all the ingredients here. I don’t think it should be too difficult, just have to mail down the cut of meat with the the butcher here.

Any type of meat thinly sliced will work. If you remember Jersey Mikes , they use roast beef . If you can find beef knuckle (sirloin tip) or even sliced sirloin you should be good . Add beef broth if you like them a little more moist . I have a friend in Finland , he uses a chuck shoulder. Just don’t tell the kids it’s Rudolph !

I was in Philly on business in 2007 and asked the hotel concierge where to go for the best cheesesteak. He said most tourists go to Pat and/or Gino's, but when he wants one, he goes to Jim's. I followed his lead and got Jim's cheesesteak "wiz wit" and it is the best cheesesteak I've ever eaten. Can't wait to try to replicate it at home.

If you're from Philly, you know that ketchup is a legal substance for cheesesteaks. Sure, a couple places won't do it (and most of those are tourist trap steak houses). The people that know, understand that ketchup adds an acidity that is missing (one that can't quite be replicated with pickled peppers). Do I use ketchup when the steak has pickled peppers and fried onions? No. Do I use it on a cheesesteak sub (that would be fresh lettuce, fresh tomato, and raw (or fried) onions for those that are not Philly natives)? No. Would I use it on a "Jersey" cheesesteak (that would be pan fried potatoes, fried onions, fried peppers, and a splash of usually A1 to combat the dryness potatoes)? No. I would consider it, on a plain steak, a plain cheesesteak, or a cheesesteak with fried onions, those all need the missing acid bite that it brings to the party. And I have to agree, that the cheesteak in this video actually looks pretty authentic. And he is right, the bread is such an important part, and is one of the reasons that you can't get a good one outside the Philly region (aside from a few places that fly in their rolls fresh each day from Philly). A lot of it has to do with the water for making the bread, so I can't say for sure just looking at the bread. My guess is that it isn't quite right if it needed to be put in a plastic bag overnight, as the best rolls in Philly are baked fresh that morning.

Great rolls! Only 2 things I do differently. One, sear the meat whole then remove, chop, and add back in. Second, melt the provolone and chop it into the meat so the whole thing is cheesy in every bite. Most importantly eliminate as much grease as possible.
