BROCCOLI & CHEESE TATER TOTS
2 large potatoes
2 cups broccoli florets
1 egg
1/2 cup grated cheese
1/2 cup panko bread crumbs
1/2 tsp mixed Italian herbs
ZUCCHINI SLICE
5 eggs
400g zucchini (approx 2 large)
140 (1 cup) self raising flour
100g (1 packed cup) cheddar cheese
50g (1/4 cup) olive oil
100g ham
50g carrot
20g spinach
1 tsp mixed herbs
salt & pepper to taste
MINI CARBONARA QUICHES
2 eggs
2 tsp olive oil
4 rashes of short cut bacon
80g dried angel hair spaghetti pasta
1 garlic clove
125g (1/2 cup) thickened cream
60g (3/4 cup) finely grated parmesan cheese
20g spinach
Chopped parsley to garnish
Salt and pepper to taste
GRANOLA BARS
1 1/2 cups rolled oats or quick cooking oats
1 cup rice krispies or rice bubbles
1/4 cup butter
1/4 cup honey
1/2 cup brown sugar
1/2 tsp talt
1/2 tsp ground cinnamon
1/4 cup shredded coconut
1/3 cup chocolate chips OR raisins
1/3 cup nuts - i use almonds
1 tbsp chia seeds
CHEAT'S FRUIT & NUT SLICE
1 cup of cereal (cornflakes, rice krispies etc)
1 cup of oats
1 cup of chocolate chips
1 cup of mixed fruit, nuts and seeds
1 cup of mini marshmallows
1 tin (395g) of sweetened condensed milk
EGG MUFFINS
6 eggs
3/4 cup chopped spinach
4 cherry tomatoes or 1/2 large tomato, chopped
1/4 cup shallots
70g crumbed feta
1/2 tsp salt
1/2 tsp pepper
