Work on setting the base evenly! You're pouring at too low of a height in the beginning, and that's causing your canvas to be white and caramel. Your circular motions need to be more fluid to allow the base to set more evenly. Edit: also noticed you're pouring way too much into the shallow end of your cup when setting the base, so it might not be your height as much as you need to aim for the deep end of the cup. The shallow end is causing all of your perfectly frothed milk to surface, and causing the uneven base.
Curious. Why would you split the shot into two diff cups? Also would it ruin the crema if you started with a steel small cup and then poured it into another?
