DIY Dough Sheeter/Roller Anyone Can Build at Home to Laminate Croissants, Phyllo Dough, Pasta Dough

This Dough Sheeter/Roller can be built at home by almost anyone. My croissants used to be a hit or miss before I built this roller. Now I am always very satisfied with how they turn out. Use it to laminate or roll out any kind of dough sheet.
The measurements of my materials:
Countertop: H 1-1/2 in
Cutting board: L 17 in x W 14 in x H 3/4 in
Rolling pin: L 18 in (incl. handles) ; L 10 in (roller not incl. handles) x W 2-3/4in
Clamp bolts: L 3in x W 3/8in
Clamp handle bolts: L 2-1/2 in x W 1/8 in
Drill bit: W 3/8 in
Round file: W 1/4 in
If you use materials with different measurements from these, here are some important points:
The rolling pin handles have to extend beyond the cutting board by at least 1 in.
Make sure your cutting board is long and wide enough to accommodate a stretched out dough sheet.
Once mounted, your rolling pin needs to be able to be lowered enough to touch or nearly touch the cutting board; and, if you will be laminating, it needs to be able to be raised high enough (at least ~ 2 in above the cutting board) to accommodate a thick, multi-layered dough.

Gigi, this is simply the best home-baking dough sheeter I have ever seen. You are a genius! I have wanted a sheeter for a long time. But, in the UK these are hellishly expensive. Think it's a great simple idea could try flat sheet metal under the board as shims say 1mm 2mm throw a few magnets to hold them down could save time rather than adjusting nuts.

lol I was thinking the EXACT same thing...and round dowels under the board to act as rollers, make a little track edge on both sides, to keep it running true

Bolt cutters worked better on the clamp handles than the saw. Clipped em at the store. Really like the wing nut and spring idea think I’m a give that a try

Hmmm... A couple of automotive valve springs underneath the rolling pin handles would give you a lot of adjustment. This is such a fantastic DIY project and I applaud and thank you for this!

I don’t know what it is about your inflection and diction but paired with the Japanese Farm Raindrop Lounge Frog music in the background??? What a ride!!?? I did give myself a good chuckle (in the best way possible…a few times over on playback) at how I’ve never heard somebody speak with such restrained enthusiasm…about croissants… hahahaha I’m almost like this person really takes this seriously or it’s literally so serious that it’s not serious at all to you because this is your life, nothing would ever be different and never will be. But THEN, we went from the “are we all in on the joke or not?” Microsoft dough (my croissant dough) bakin pies everyday like Miss Ever Jane to frickin Betty Crock with the pot putting ALL our shoulders to shame!! Such a juxtaposition like you rolling out the hardwares and the blades hahhahaha seriously I was like are they like stuck on the prairie in Utah and dont know what a car is or are they in their basement in NYC on a freeze you to the bone winter day! I JUST DONT KNOW. Love this though thank you for sharing. I will be using some of this knowledge to build a roller for making papyrus paper, the ish grows like a weed down here in FL and takes over the yard every month.

Wouldn't it be easier just to roll it out by hand? I'm trying to get the reason for this if you have to continuously adjust the nuts on the side to get the right setting. Once you do it enough, you will know by touch that you have it right ( whether the dough is getting rolled out evenly or not).

I was looking to emulate a dough sheeter, which all professional bakeries use. A sheeter rolls it out both gradually and evenly. The nut adjustment is pretty quick and simple. And I'm not at all against rolling it out by hand.

If you’ve ever rolled croissant dough by hand you’d know why a dough Sheeter becomes such a valuable kitchen tool. Rolling by hand is very tedious work and if you have strength/arthritis issues in your extremities it’s even harder to do.

Hi Gigi, This is great I am trying for a while now to find the right clamps and bolts. I bought C-Clamps and I cant find the right bolts, every store says its a special kind of screw and no bolt will fit. Is there a chance you can link to the products you used on Amazon? Thank you !

C-clamps usually use an ACME thread. You won't find nuts to fit at a big box hardware store but google should help you find someone that stocks them in your country e.g. McMaster-Carr in the US. You can find information online to help you identify the parameters of the nut you require.

Good idea, how about putting some springs on the top of the adjusting bolts than you don't have to keep lowering it.

Clever idea! But I think to save time, instead of adjusting the rolling pin each time, why not keep adding a series of sticks of a defined thickness under the cutting board instead? Just slide the cutting board on the sticks. Keep lifting the cutting board up to the roller instead of lowering the roller down to the cutting board?

Hell, a manual sheeter is $500. Electric ones, even for home use, are a grand. I want something to sheet pizza dough like the restaurants I've worked in. I am so trying this.
