Because there was no reason for it to be changed. Obi wan and Yoda’ ghosts were old and Anakin was redeemed at the end of return of the Jedi, so why would he go back to looking young? I’d argue he didn’t die a dark side user.

Also they're also not great in the love department- none of the movie canon Sith had girlfriends. I know the EU emperor had a "harem" in some sources but there wasn't much in the sense of actual relationships since you become a tremendous, rotting asshole. You're better off being an assassin or Jabba- and in the pre-Disney EU the New Jedi Order were totally allowed to have relationships and Luke was married with a kid
