I would love more cooking lessons with dehydrated food videos. I think calling the segment Marcy's Messy Kitchen is fun! I just bought your dehydrating book and can't wait to get it. I love dehydrating and I want to expand what I can so with my machines.

I've found that the replacement of oil with the apple sauce only really works if you eat your baked goods up the first day. Any leftovers are dry and not enjoyable. I like the idea of the zucchini powder/flour though, so will definitely be using it!

I use either grapeseed or sunflower seed oils in place of vegetable oil, no strong flavors and they aren't as expensive as avocado oil. I have some arm sized zucchinis I plan to peel and seed to dehyrate for powder. I came across a mug bread made with just zucchini powder, I was good, just a bit more eggy than I cared for. I want to make more to see if I can tweek it i to something better.

It needs a bit more moisture - so be sure to see that note I included - don't skip the oil.

Great lesson, Marci! I am allergic to wheat so I'm wondering if I can use gluten-free all-purpose flour? I could add the gluten back in if necessary. What do you think? Thanks for sharing your knowledge.

I'm not a baker, nor am I gluten-free - so I have no experience with it, i'm really sorry. You can make this recipe just like you'd make any gluten-free switch from other recipes, but I don't know how replacing a portion of that flour will be affected by zucchini flour. I'm sure someone else will pipe in.

I’m doing this Recipe for sure. This is a little off-topic, but can I add celery trays to my 1 tray of almost done pineapple, and lower temp to 125?

You can if it's necessary, but you're introducing more moisture into the pineapple taking them even longer to dry. But it's not going to harm anything.

What is zucchini flour's texture like. I image I could us it in low carb, gluten free and vegan flat breads with out a binder.

You cannot use it to replace flour except for coconut flour. It's a supplemental replacement, not a 1:1 replacement. You got a glimpse of it in the recipe - it's powder, just like any other dehydrated powder you use. The texture depends on how find you grind it.

Please I have a question for you. Could you tell me if you know. Because I forgot my super greens in dehydrator for 2 days. They were done, after 2 days I put them in a jar and I am moving the canning jar every day to make sure they don’t stick. Are the super greens still good after leaving in dehydrator for 2 days. Help please

If they were fully dry - they are fine. Dry them for a bit because they will have absorbed the residual moisture in the air - and then continu with storing.

Darcy... i have question unrelated to this vid. I've been dehydrating cherry tomatoes and tomato slices. The cherry tomatos I slice in half and squeeze out some seeds then put them on tray. My question is about the level of hardness they should be. You said all food should be dry enough to clink when dropped and then clink against glass when conditioning. Most of my cherry tomato I get this dry but most of my slices are a bendy rubbery. I didn't dry them more because I like eating them chewy. So for the tomatos that are not HARD dry... do they have to be kept in the fridge? For the hard cherry .... to use them like a sundried tomato do I just soak in oil for a day before using them? I dehydrated a full large zucchini that was 16" long and was shocked to get less than a 1ltr jar of dry. When you rehydrate these do they come close to original size? A 17" zucchini I would be using every day for a week .... but these little pieces in 1 ltr jar I can see using Just a few times. I'm also assuming to just throw them in soup or stir fry and not soak in water first? Thanks so much for all you do to teach us. This is truly changing my harvest season this year since I just don't have the room to freeze veg.

I would store them in the fridge/freezer, yes. Any leftover moisture can turn to mold pretty quickly. They do not come back to full fresh size, no, because the fibers are a bit damaged in the process, but they get close, and you can still use them much like you'd use zucchini in any dishes - you just have them available in the dead of winter now when zukes aren't growing. If you want them in stir fry - I would rehyrdate, but into a slow simmering soup or stew, they'll rehydrate as they cook.

Marci, please help i made 12 boxes of blueberries over 48 hrs & powdered them. Really tasty. But after I put them in a quart jar, they are caking in the jar. Does that mean I need to dry them more???

You can dry them more if they've absorbed moisture over time by being in a container that's too large for them, or you've introduced moisture from a humid environment by opening the jar a lot. Thank You. I still don't know your name & I'm really embarrassed to say that I see 2 names wherever I look (Darcy & Marci). Thank you for helping. This is my 1st attempt at dehydrating in a new Sedona machine. I am now trying peaches which seem to be the only food NOT listed in the Recipe manual. Whenever I get stuck, I run to you. I haven't figured how to join your group, but I'll keep trying. I am determined to get this down because we live in a small house and even with 4 pantry cabinets, we just can't store enough canning jars. This is a dream.

Sorry for a question that does not relate. You peeps that DEHYDRATE caramelized onions.....how to you caramelize them? If you fry them there will be a fat to go rancid
