Dr. Phinney received his medical degree from Stanford University, holds a Doctorate in nutritional biochemistry and metabolism from the Massachusetts Institute of Technology and completed post-doctoral research at Harvard University.

Dr. Phinney is the man who started me on a Ketogenic Diet - 5 years ago. This is a GREAT LIFESTYLE !!! I eat one or two meals a day and I don't miss the foods I used to love. Fasting isn't a problem. I have not lost any lean muscle mass despite being 64 years old. Just watch your electrolyte levels during adaptation and you will be fine.

So, when I first started keto, I had no idea what I was doing. Had keto flu, as it's called, including things like blurry vision. I decided one afternoon to just have a couple of dill pickles, and it all instantly cleared up. I was not sure what happened. This is the first video to actually tell me what happened. And the fact that he even used pickles as an example was great.

This guy is amazing! He cuts to the chase, but expresses his point in a simple and clear manner that makes it so easy to follow! He actually makes sense without sounding overly medical, scientific, or otherwise esoteric, and yet, has the science right there to show where he’s getting the information. I’m actually learning a lot listening to him!

One thing that happened to me when I started the keto lifestyle was my lips became very chapped, and cracked. I thought I was dehydrated from the new diet but I drank a lot of water to resolve the issue. That didn't work so I tried eating more salt in my foods and that cleared it up. So now I salt my salad, salmon, steak, and celery. I salt to taste.

Dr. Phinney, I LOVED your book, "The Art and Science of Low Carbohydrate Performance" and want to thank you for solving the low carb problem I've had for almost two decades: SALT!! I struggled with keto flu until I just figured I couldn't be as low carb as desired, and no one back then was talking about salt. Every aspect of my physical experience is better on a keto diet, and now I can stay on it, no cheating necessary. Thank you a million times over!

I have chronic diseases like pkd. I am on ketogenic diet low carbs. I stopted total salt. My question is should I 8ntaje salt if yes, then how much quantity I should intake salt. Or I never intake salt thanks

Psst! Wanna know a secret? Lard (from pork) or beef tallow are still the best fats to fry in!!! Beef tallow can be purchased cheaply from most grocery stores. It is the fat they trim from the meat they sell. Rendered lard and tallow are shelf stable, at least until the container is opened. Now available online, or from natural food co-ops, or Whole Foods and better supermarkets.

@@beau5296 I don't know about the article but I just spent 3 weeks in the forest meditating, eating once or twice a day. I had reduced my intake of food and lost 7 to 8 pounds over that period. I noticed that I had lost some muscles tissues although I was taking whey protein and 150+ natto for the first 11 days and cheese; that is a fact. I'm presently working on getting some lean muscles tissues back. At 73 and almost 8 years of keto, loosing strength is not an option for me.

My 2 cents: A combination of intermittent fasting (18 to 24 hours -- longer on occasion), AND a ketogenic diet are highly beneficial. In healthy individuals, fasting by itself promotes all kinds of physical benefits besides weight control (plenty of documentation is available all over). But it should not be followed by bingeing on anything, much less carbs.

A lot of really good information, though I do have to disagree on the fasting. As somebody who has done several long fasts, I didn't lose any significant muscle mass. My health, and my blood test all indicated that the fasting was quite good for me.

I agree with you, Son of Liberty. Our body physiology is smart - it isn't going to eat your muscle, it's going to eat your fat. Ketosis is the state of eating stored fats.

Dr. Phinney, you are an inspiration. I wish my GP would lean towards what you are proclaiming. He constantly wishes me to take statins. My cholesterol is through the roof even though I have been keto adapted for quite some time. I feel great on the plan, and am encouraged by hearing you speak about your research. Thank you!

Yess!. I kept hearing references to Dr. Phinney and his research, which pointed to him as a leading expert in Keto. This video was packed with information and especially answered questions I had this week on some problems I was running into. Protein too high, healthy fats not high enough in my percentages. I know that I suffer from several decades of the "low fat" dogma and I'm mentally trying to comfortably make the switch in that regard to Keto principles. I have CAD and my cardiologist's head would likely explode, however, I knew I had to get processed sugar and carbs out of my life/diet or Type II diabetes would take me out first and that's how I've found my way to Keto. About 45 days so far. Losing weight, feeling great, mental clarity, satiety, no hunger cravings, etc. Even common sense would tell me this is good for me. But I have to get the fats in intentionally and as he says within a "well formulated ketogenic diet". That's going to be ringing in my head.

Well done! I’m happy to be on a well formulated ketogenic diet. I also do time restricted eating- 16/8 up to 36 hours fasting. I am also exercising 1/2 hour each day ( consisting long walks and strength training). I have eliminated my blood pressure and statin medications. I’m in better health than in my last 20 years. Thanks to people like Dr. Phinney who teach us the right way to eat.

Nearly all olive oils on the big grocery store shelves are diluted with other cheap oils most of which are not desirable for keto, including 'high end' oils and especially imported oils. It's legal to do that, it won't be on the labels. The answer is to buy oils produced by a single farm, small producer, health food store offerings, so yeah it's not cheap but is so much healthier. It's also tastier than any big producer oils so you can eat small amounts at a time as a topping & dressing and use less expensive oils like coconut to cook and bake with. Bottom line: big box store olive oils are false friends, do not rely on them to be a major source of good fats for keto!

Yes, counterfeiting olive oil is reportedly a new profit-generating activity for the Mafia. Apparently it is less risky and more profitable than selling illegal drugs. In addition to diluting or substituting cheap seed oils ('vegetable') for olive oil, which IS illegal but hardly every prosecuted, chemicals are often added to disguise the fact - and some of those chemicals are highly toxic. They don't care. Olive oil from Australia, the USA and a few other places is likely to be the real thing. (Sadly, many California olive groves were converted to housing developments.) Phinney tested the olive oil from Sam's Club and it was the real thing, but I would still wonder about each new batch.

Australian olive oil is indeed top-notch (we have the climate and the soils to grow world-class olive oil, and wine; and we're big exporters of both). But there is a way to tell at a glance if you live elsewhere ~ good olive-oil should look like olive-oil! It should have a _decidedly_ olive-green tinge; and if it doesn't it's either very second-rate, cheap oil (from second or third pressings), or more likely, it's not olive oil at all. Apologies to Dr Phinney but that oil he held up did not look like olive-oil to me; and if it really was, I'd be wondering what the helll they did to it! Being Australian I am spoilt when it comes to many foods - I know that - but if I'd seen that on the shelf, I would not have bought it. If nothing else, olive oil should come in a tin, or failing a tin, in a _dark-green_ bottle, NOT a clear bottle. Here at least, clear bottle equals cheap, nasty oil.

@@ZimZam131 In Australia, some foods are irradiated when they are imported into the country. Since 2001, herbs, spices, some herbal infusions and teas, peanuts, almonds, cashews and pistachios are irradiated in Australia.

Dr Phinney is another of my new found rockstars!! Amazing DATA! I am happy to say that could help some clients lose significant weight using a ketogenic diet (one of them lost 50 pounds in eight to nine weeks). Less than 25g of Carbs, 0.5 g of protein per pound of lean body mass, and Plenty of fat (clean fats like SatFat from Butter, Coco oil, some nuts, Olive Oil, Avocado oil). One side effect that I saw in two of them was constipation. Great that now I know how to adress it. Even for me. I have been ketogenic for close to 24 months, and I do feel amazing. And now with the "salt" wisdom, even better! Where can I send my resume? ;-) kudos Virta!

Thank you Dr Phinney. I was blaming my magnesium intake for headaches, dizziness and the dreaded constipation!! The sodium deficiency makes much more sense to me. Like fat, sodium is one of those things that weve always been told to avoid........salt bad.....fat bad mentality. I'm going to give this a try and see how things go.

Thank you Dr Phinney, very "to the point", but I wonder about that olive oil in a plastic bottle, there's a good chance that its not 100% olive oil, and it's already oxidized being in a clear bottle, and even more concerning is the plastic clear bottle. We're all learning and what I've learned long ago is that real olive oil should be only purchased if in a dark glass bottle only with a harvest date clearly stated on the bottle, and if there is no such date, the likelihood of the oil being altered, or not real, is high. And seed oils are a concern, again in plastic:)

All seed oils should be avoided - regardless of the packaging. Passing these off as 'vegetable' oils and shortening may be one of the most clever marketing ploys of all time. Plastic packaging should be avoided (as much as possible) regardless of the food or beverage they contain, as all plastics transfer synthetic chemicals to the contents. Phinney tested the olive oil from Sam's Club and found it to be the real thing, but I would be concerned about each new batch.

Exactly Dolores! Spot on, on every point. Good olive oil is olive-green; and as far as I know, is it NEVER sold in a clear bottle! (I'm Australian and our olive-oil is first rate, and so is the packaging thereof; but I've also bought it in Italy, France and Spain, and I've never seen it sold in a clear bottle before (but then, France, Italy, Spain and Australia aren't selling fake olive-oil!). So I don't know if that's just an American thing, or what, but as you said Dolores, if it really was olive-oil - which I too seriously doubt - there's something very wrong with it! In fairness, it could be from second or third pressings, so it's a substandard oil already, but it still should not have been sold in a clear bottle. ------------------------------------------------------------------------------------------------------------------------------------------ As for your comments on seed oils Jefferdaughter, that's not entirely true. If the seed is *naturally* oily (i.e., if you squeeze it with your fingers, you get oil).~ like olive, sesame, rapeseed, peanut, almond, avocado, coconut, walnut, flaxseed, et cetera, it's okay It's the *not* -naturally-oily-seed 'vegetable' oils (that have to be industrially processed to produce an oil from a non-oily plant) that are toxic. These would include soybean, cottonseed, corn, et cetera. Rapeseed oil (aka 'canola') and Sunflower oil are both naturally oily plants, but you should limit your consumption of canola because of its high omega-6 content; and you're best to eat the sunflower seeds themselves, if you like them, not the oil ~ again due to the high omega-6 content. And you'll hear a lot of nonsense about rapeseed oil - on the internet it never bloody ends! - but just remember that the eastern half of the world has been living on it for forever, along with lard; just like westerners have traditionally used olive-oil and tallow. So feel free to eat rapeseed-oil if you like it, but it must be COLD PRESSED, and pure; and just like olive-oil, you shouldn't cook with it. Treat it like you would olive oil ~ it's a dressing, not a cooking-oil. Good rapeseed-oil is NOT an industrial 'frankenfood' creation - that is a complete myth! - it's a natural oil, cold pressed from a naturally oily plant.

All of our oils - olive, avocado, coconut - is stored inside closed cupboards in the coolest room in the house (not in the kitchen). We have no other oils, period.

Great info, Doc. Years and years ago, I was a high school wrestler, and accustomed to fasting for long periods. Fifty years on, I am moving toward Intermittent Fasting (IF) of the 16:8 variety (fasting 16 hrs, eating window of 8 hours); and that, only about 3 times/week. I am also moving toward LC (50 gr carbs/day). Probably my biggest hurdle is fat - I grew up repulsed by it (not only dietary guidelines, but also the aesthetic/cosmetic appearance).

Concise credible and understandable. Fantastic presentation series. Thanks very much. One thing not discussed that I would value Dr.Phinney's view on is the matter of low carb hyper responders. I have been on the Keto diet for the last year following almost exactly the diet Dr. Phinney describes. All of my markers (I have been type2 for 50 years) have improved markedly and I am off most of my diabetic and hypertension meds. However, my LDL has skyrocketed. Whether this is a problem or not is hotly contested and I would love to get his take.

Also there's a big difference in table salt which is just sodium chloride and the more natural and healthy ones which contain a wide variety of minerals that help balance out the natural sodium

Not really. Most sea salts consist almost entirely of sodium chloride, which is the same as regular table salt. There are trace amounts of other minerals and contaminants, but these are not available in significant amounts. In total, they typically represent only about 2% of the product, with the remaining 98% being just sodium chloride. Read for yourself: himalayansaltusa.com/himalayan-sea-salt-nutrition-facts.html _"It contains about 98% sodium chloride, 0.07% magnesium, 0.05 sulfate and about 0.0006% iron."_ Of course, some minerals contained in sea salt are only needed in trace amounts, but the minerals a body needs to "balance out" sodium are primarily potassium, magnesium, and calcium. You're not going to "balance out" the sodium in sea salt with a product containing only 0.07% magnesium (23,900 ppm), and even _less_ potassium (4280 ppm) and calcium (28.7 ppm)! To put this in perspective: the RDA for sodium is about 2.3 g/day for sodium, 4.7 g/day of potassium, and 400 mg/day of magnesium. Obviously, only lethal doses of this sea salt would be required to satisfy the daily requirement for potassium and magnesium, and they still wouldn't be in balance with the kgs of sodium you'd be ingesting! To "balance out" the sodium you'll need to either eat foods rich in potassium and magnesium, or take other types of salts (like No-Salt) or supplements that provide these elements, and that's true whether you're using any type of sea salt or just ordinary table salt. Metabolically, this popular brand of sea salt, and most others functions just like table salt. The trace minerals might be of some benefit, but others may also be harmful, and there is often no way to know. Eating a healthy diet, perhaps supplemented with a good multivitamin will satisfy the requirement for the trace minerals that are actually known to be beneficial to human health. How much bromine, cadmium, or lead do you really want in your diet? How much is in your sea salt? Most people have no idea.

Hi, Interesting video. I did a straight cut into a Ketogenic diet and interimittently fasted at the same time. Its something I keep up with still, 4 months in now. I had the Keto flu mentioned, or low sodium levels. Very interesting to recognize the symptoms. I learned how to balance it after a while and it got better. Now my Meals are quite well balanced and Im seeing stable results. Being able to stick to a functional diet is such a boon.

I've been doing fasting and working out in the gym with keto, and I've gotten much stronger in the gym over time, so I can see that my lean body mass is preserved. However, I do 24hr OMAD IF almost every day, 36-48hrs fast once a week or less, and 72 hrs fast once a month or less. Also, I take periods off, like 4 weeks of just omad, with the occasional carb meal, and then back to keto omad for a few months. In essence, I use the fasts as a detox method, not for the weight loss. I eat to satiety when i eat (sometimes beyond satiety, unfortunately ;) )

I'm enjoying your video series on the ketogenic diet, however, your information on fasting is out of date. Because of the old "starvation study" and the documented effects of calorie restriction, researchers had erroneously concluded that fasting would just result in more of the same thing. More recent studies show that calorie restriction and fasting affect the body in radically different ways because of hormonal effects. Calorie restriction will slow your metabolism, but fasting actually INCREASES your metabolism by dramatically increasing your body's production of human growth hormone. After fasting for about 48-72 hours your human growth hormone will increase by something like 300% or more. Fasting actually is LESS likely to result in muscle wasting. The needed protein doesn't come from muscles but through autophagy and "recycling" of old/damaged cells, loose skin, blood vessels that are no longer needed to service fat stores, etc. Nobel prize in 2016 was for work on autophagy.

he warned about very long term fasting like one to four weeks. The high secretion of HGH comes from short terms fasts where the body is physically stimulated and that's where the autophagy and HGH preserving the muscle comes into play. After too long in a fasted state your body will break down muscle tissue regardless of what was mentioned above simply because the brain NEEDS glucose in order to function. Then, gluconeogenesis will kick in and eventually eat your muscle out, specially when body fat storages begin to run lower.

However, it is important to note that body fat is also a significant source of glucose during a fast since the fat itself is composed of triglyceride molecules, each of which has a glycerol "backbone" that the liver can and does convert back into glucose. @@MrBarasinski All I can say is that you are mistaken about fat catabolism. As I explained, stored fats are made of "triglyceride" molecules, each of which is composed of 3 fatty-acid chains on a glycerol backbone. When triglyceride is metabolized for energy, some of the fatty acids are converted into ketones, and the liver (and perhaps other cells) convert the glycerol back into glucose (this is the reverse of the process used in de novo lipogenesis, which transforms glucose into glycerol that is then combined with FFAs to form trig). Thus, fat catabolism is _one_ source of the glucose produced during fasting in the process known as "gluconeogenesis". This is not harmful -- it is in fact essential, since the human body needs to prevent blood sugar falling too low, otherwise unconsciousness or death will eventually result. This occurs because some cells in the body absolutely require glucose to function. In particular, mammalian erythrocytes (red blood cells) lack the mitochondria needed to metabolize fats. It is particularly beneficial that some of the sugar produced during gluconeogenesis is derived from stored fats (trig), otherwise it would be necessary to derive the needed glucose entirely from protein, which would result in a much faster rate of loss of lean muscle mass. I didn't claim that the brain relies exclusively on glucose, or that it works better on glucose than ketones. Perhaps the brain does not require _any_ glucose! A fat-adapted human brain could perhaps run entirely on ketones, since brain cells contain mitochondria. However, even on a long-term fast, brain cells will burn a certain amount of glucose (~25% of brain energy, I think) since the glucose _is_ available in the bloodstream and brain cells will pull it out and use it if they can. It's impossible to carry out an _in vivo_ test to determine whether or not brain tissue can run entirely on ketones, since to do such an experiment it would be necessary to reduce blood glucose to 0, which would kill the test subject. An _in vitro_ experiment might work.

The best source of fat I have found is beef trimmings (grass feed), it's cheap, it's unprocessed and not heated so it's less oxidized, it tastes good unlike many oils, it has a good nutritional value unlike oils, it's most similar to what we would have eaten in the past unlike oils.

It was quite a shock to see canola oil shown in the preferred fats graphic! Can you please help me understand why? There is a mountain of research that presents evidence that canola is NOT a good choice for those who are attempting to improve health. The other fats in the graphic are terrific. Canola, however, doesn't seem to belong in the list. It would be very helpful to know why it's listed. Dr. Phinney doesn't address this in the video. Thank you so much.

If you live in a hot climate (like me), bone-broth might be the last thing in the world you feel like, except in the dead of winter and/or when the temperature drops below 35°C... So here's my Australian Outback equivalent (let's call it RooAde!):- * 1 tsp salt * 0.5 ~ 0.75 tsp of your prefered sweetener (assuming it's a 1:1 with sugar), adjusted to taste * 0.5 ~ 0.75 tbsp of lime juice, adjusted to taste * 1 tbsp of lemon juice * 1 tiny lemon off your own tree - skin, pips and all - sliced (or parts thereof from a store-bought lemon, to about a tbsp). * Soda water, to make 600 ml (NB: this is NOT what Americans call 'soda', it's just a lightly-carbonated spring-water, without sugar or anything else. It's H20 that has bubbles, that's it). Drink as needed (which might be by the gallon if your weather is like mine!). It's wonderfully tart, without being overly so, and very refreshing. (And if you're really having trouble getting enough sodium, just do what we do and add Vegemite to your diet -- by the spoonful if you're a fair dinkum Aussie, or on toast for everyone else [on keto bread, of course. NB: full-almond meal makes a better bread than either skinned-almond- or coconut-flour for Vegemite toast], with lashings of butter; on it's own, or with sliced tomato, or with your egg, for breakkie -- or all of the above. Breakfast of champions in Australia! And no 'keto flu'. And if you're keen on the idea, I don't blame you - we do eat 7000 tonnes of the stuff every year after all! - 1 tsp of Vegemite has 1.5 gm of protein, 200 mg of sodium, no sugar, no fat, and is loaded with B vitamins ~ there's half your daily thiamine and folate in 1 tsp. It also makes a great Bonox substitute in winter, now that they've adulterated Bonox with sugar; and don't forget to add it to any beef recipe to enhance the flavour, but don't add salt as well because you won't need it. Declarations: I actually _don't_ work for Vegemite ... I'm just a fan. But remember, fan is short for fanatic ... and I admit it! ;)

Fung cites research where lean mass is preserved in a fasted state. As for survival, after several days fasting, strength and acuity must be preserved or even enhanced to be genetically favored in our evolutionary world, gotta be able to hunt or work hard when hungry:) Since muscle protein is constantly being assembled and old muscle tissue protein being disassembled concurrently, as well as the recycling of old cell proteins in autophagy and apoptosis, do we require constant new protein input? Dr Fung & Professor Phinney both make a strong case. This must be clarified because according to Prof Phinney, Dr Fung's fasting treatments are all wrong??? Help!

Sure, we are all part of the same tree of life, but that doesn’t mean that there are no differences. Take hibernation: bears can do it, we can’t. Try lie in a cave and will your heart rate to decrease to a couple of beats per minute.

Thanks for these videos. There are many bloggers and social media posters (like me) who strongly support these and other points contained in "The Art And Science of Low Carbohydrate Living" and "The Art and Science of Low Carbohydrate Performance." However,,, I believe that the contribution of body fat as part of your "macros" needs to be much better explained, especially visually, for newbies. Many struggle to understand how ratios change if talking about your 2800 calorie TDEE vs. your 1800 weight loss dieting phase. Perhaps simply shading part of the 75% fat content of TDEE to show the contribution of body fat would do it, and the impact to the "ratio" of the same amount of protein against these two different calorie levels. A 15% protein recommendation may be fine if eating at TDEE calories, yet may lead to malnutrition if that same ratio is extended to a hypocaloric diet. Secondly, to be fair, I believe that the impact to the dieter's metabolism in the Biggest Loser contestants can better be explained as falling into the Very Low Calorie Dieting range, as no competitor ever did any extended fasting, to my knowledge.

Thanks for watching! Dr. Phinney doesn't recommend tracking macros as percentages-he recommends eating your protein requirements (as outlined here: blog.virtahealth.com/how-much-protein-on-keto/), keeping your carbs under 30g, and eating fat to satiety. The amount of fat you require for satiety will change as you move from weight loss to weight maintenance.

People should stop promoting keto, it is not a diet anyone should adhere to without doctor supervision. Everybody should eat a diverse diet and that includes carbs. For me, the Agoge diet plan worked wonders, I no longer have visible cellulite and lost significant amounts of fat.

Interesting takes on "troubleshooting" ketosis diets, and at the end the effects of adding fasting to ketosis. I have been on keto + IF for 7 months now, lost 65#s... my energy levels were very high, but in the last 2 months they have dropped significantly... also, some inflammation has returned. I will raise my sodium and potassium (not enough per this video and others)... I'll test this for a month. If that doesn't resolve it, I may end my 18:6 IF and go to a "normal" 3 meals per day.

You might be getting inflammation from certain food groups. Check out Autoimmune Protocol (AIP). I have major inflammation for skin issues. IF and ketosis has helped, but I'm moving on to AIP to see if I can get ahead of it.

Maybe you could take a break from keto and fasting, then go back again. Doctors talk about metabolic flexibility, being able to switch between carbs and keto with ease, I guess this is the best. I am trying keto and fasting but don't see any change in energy level.

The breakdown of muscle is caused by high-carb diet and working out. I’ve experienced that myself. My skin became saggey. But when i do the keto diet without workout, i gained my muscle and remained tight rather than saggy.

Good info thanks. That olive oil looks like sunflower oil. In Portugal our olive oil extra virgin is really dark green and it comes in a glass bottle of 1 liter it costs €3 a bottle. Not expensive at all. I guess you could order it online - this good brand is called Galo 🐓

I agree. While Dr. Phinney might be well versed in physiological aspect of ketogenic mechanism he is no well versed in product recommendation, as well as other areas of keto diet spectrum. There are some holes that he needed to fix for his future presentations. Dr. Fung and Dr. Berg do not recommend Xylitol or Sucralose, they prefer Erythritol.

That's what the Intermittent Fasting does. 12 hours of not eating is required to initiate. Stops after hour 19. Dinner at 6pm Next meal at Noon the following day = 6 hours of autophagy - which is a good thing!

Thank you for the reminder to reach satiety through fats! Fasting sets off my compulsive overeating condition so I do not practise this way of eating. Some carbs have been creeping into my diet lately and lack of fat is the reason for this. I will up the fats and stop the carb creep.

Actually, Jack, that is a common myth. People on a low-calorie low-fat diet may lose weight in the short term, but their metabolism is lowered and they always gain the weight back - usually gaining back more weight than they lost. The people on the TV show 'The Biggest Losers' are never brought back for a reunions show because of this problem. Does the body learn to ketoadapt if you have done it a few times before successfully? Or once you have busted your keto diet, then months or a year or 2 later you kick it back up again, do you start absolutely from scratch where the body takes the full length of time to adapt? Or is it quicker because the body has learned that when you start consuming differently it knows, now, what to do and it's quicker or easier on you?
