Whether you call it Dry Canning or Dry Packing, it's rebel canning at its best. In November 2022, we canned hash browns, fries and peeled potatoes for mash. You wanted a 3 month review. Did they discolor? Did they get mushy? Will they still brown and crisp up? Do they still taste like fresh potatoes?

I've tried this dry canning method and it was much better than the potatoes soaking in water. They didn't have a weird taste, smell or texture! Thanks for the video!

Carter a triple crown potato success! Your canning method looks so much easier. Enjoyed seeing your taste testers. I started steaming my potatoes for mashing. Have a steamer pan that fits over a saucepan with a lid, not a basket. Cooks larger quantity. Really fluffy. Have a great week.

Interesting! I'd never think of steaming raw potatoes for mashing. If the starch doesn't get left behind in the boiling water, it stays in the potato, I assume. Is that what makes it fluffier? Food science! 🙃

ppl have done this for gens. if there is anything living in your jar - without or without water - after pressure canning, then cooking the food after opening - it didn't seal, or you contaminate it after opening, or you didn't have right amount of time/pressure ... they also use the oven/fire to can (never got sick from that either - 15 kids raised this way). generations of ppl raised this way and we all got here ...

I have only dry packed potatoes so far. Like you, we are low carb so I don't plan to eat them unless there's a darn good reason. A few carbs aren't deadly, it's the food the carbs are coming from, lol. I'm so glad I found your channel the other day Carter! Many Blessings from Deborah in West Virginia!

Thank you for the video, and how you’ve tested the potatoes. I was a little Leary, but tried canning them dry a few weeks ago. They look amazing in the jars! Now I’ll get going on more potatoes. I’ll also try other veggies ☺️

Carter I made red curry and it is delicious. Thank you so much. Chicken, onion, red bell pepper, zucchini and carrots. Followed the Allrecipes recipe and how you sauteed and added a little more curry. Thank you so much. My husband loves it too.

I canned my extra potatoes this year. Planning to make warm German potato salad with them also. Easy quick side dish. I love how quick they are to add I to a dish.

I have never heard of “dry pack raw” potato canning. Wow! Those seemed to turn out perfect! I am going to watch your instructional videos now. Thank you. ( I am 61 yrs old so I guess you CAN “teach an old dog new tricks” 😂)

You should use plant cream. I had seen it at the store not that long ago and I don't do dairy so I bought it and tried it actually turns out really good I use it like half and half

Awesome! I tried canning them after your original video but I didn't have lime so I used lemon juice. I did use Redmonds salt too. All was well until the canning process. They turned brown and tasted yucky. I'll give it one more shot without the salt and adding the lime.

Hey, RCD! Good to see you. I have been looking forever for a way to can sweet potatoes that doesn't leave them soggy mush. My concern with dry canning them is that they are so very dense that the heat might not be able to penetrate sufficiently to make them safe. I continue to investigate!

I am definately going to try..have you used russet potatoes or northern red??..usually they russet on sale..be safe & blessed🙏🙏🤗🤗

Yes. Russets are what I normally use for fries and hashbrowns, although they do tend to discolor a bit because of the sugar/starch. This year, I'll be using Kennebecs and Elbas for my fries. We'll see!

I think they would be just fine for cold potato salad, if you normally use russets for it. I have made potato salad often from the dry canned baby gold potatoes, and it's perfect. kKep me posted!

Watching your ads and canning destroys vitamins? I have cidp disease and numb hands and do make my hubby a huge pot full, I use butter and can milk and at times I use cream cheese and sour cream. Almond milk would not be good for my hubby. I am going to try dry canning potatoes. I am so glad you did all of the potatoes. I will be making the hash browns or making them small. Thank you so much.

Hmmm. Andy, I have not done beets any way other than pickling and water bathing. When you PC them in water, do they turn out water logged?

About the starchy water in the bottom of the jar - could you rinse the starch off of those? Does the citric acid soak cause them to have a sour taste? Could you use lemon juice instead of citric acid in the soak? I'm wondering if the mashed potatoes would have a better consistency if I used a masher or put them through a ricer instead of the electric mixer??? Mixers tend to make even fresh boiled potatoes a bit gummy. I know you can't have it, but butter and milk or cream would be amazing in those mashed potatoes :)

I'm sure you can do a better job with the mashed potatoes than I did! You can definitely wash the starch off the potatoes on the bottom. I haven't tried them with lemon juice, but I would expect more of an aftertaste than the citric acid. To me, it's nearly unnoticeable. Let me know if you give them a shot!

I haven't, Susan. I usually treat it the same way I do sweet potatoes when they have reached the end of their storage life. Cut into about 1" chunks, roast, then flash freeze before vacuum packing for the freezer.

I've made so many hashbrowns, I will try to keep one for a year. The fries are a lost cause. My husband is addicted. We go through them like crazy,

I'm not against dry canning potatoes but have always heard that cooking them for 10 min after opening the jar is the way to go as that would kill any botulisim that may have gotten in.....

Welcome, Lu! I have researched this extensively and cannot find a large group of folks (country, culture, generation, etc) who has canned sweet potatoes like this. I do have one viewer who tried several times and decided that the product was still inferior and not worth canning. Sorry!

Next time instead of microwave. The potatoes what you do is melt butter and Put milk in with the butter and get that hot not bubbling but hot then mash the potatoes and put that hot in it so that you don't. Have to microwave the potatoes and they turn out amazing.
