When my wife gave birth to my 2nd child 15 yrs ago, our confinement lady made this dish for my wife & had it every other days. Usually I finished the leftovers & I liked it a lot. I still have this dish now once in a while when eating out. Now that this recipe is out, I'm gonna cook it for myself & family too. Thanks for sharing this lovely recipe! I'd just like to ask if I can add some dehydrated mushrooms (香菇) and if can, when should I add them in to cook it? Is it before the 1.5hours simmering?

Hi, can I use pork belly instead of trotters? (For regular dish, not for confinement meal) or what other parts of pork I can use to substitute trotters?
How many grams of trotter would you reckon you used? Not pregnant, and living in a country where it's hard to obtain trotters so would like to replace w/ pork belly!
Great recipe! To save energy, I used the thermal pot method. Boil the ingredients at high heat for 15 minutes, then put the pot in a thermal pot and let the cooking continue in its own heat in the thermal. To serve, remove from thermal pot and bring to a boil again for another 15 minutes. The meat and fats were gelatinous with the meat falling off the bone. Perfect in flavour and texture! The only other tweak I would do is to reduce the sugar by a third. This recipe is a real keeper.
Thank you for recipe. This is the second site that says to use that brand of vinegar that isn’t available in USA. What else is good....anyone know? My first time to try to make so I want to use the good brand
If there is a 99 Ranch Market in your area you should be able to buy a pre=sweetened black vinegar from Hong Kong. Only remember part of the brand name with the first Chinese character eight.

Very disappointed to tune into a cooking video and find you talking about CordLife. I look forward to your new recipes every Saturday but this week I have switched off before the recipe started. This is not what I subscribed for. I hope you take note. That said, I do love your recipes and have made many of them. Some of which are firm favourites of my husband and I. Keep the recipes coming - but just stick to the cooking.
