Pork leg vinegar is my all time favourites. Somehow, it's not easy to find nice te ka chor outside having the right balanced between sweet and sourish flavours. Generally, the simplest formulae is to use 1:1 between sweetened dark vinegar and water, added with abit of rock sugar.
Pork Leg Vinegar
Ingredients:
1kg of pork front leg
1 bottle of sweetened black vinegar (500ml)
500ml of hot water
5 hard-boiled eggs
1 old ginger (rinse them clean, cut into small chunks and lightly bruise the ginger chunks)
2 dried chilies (de-seeded)
2 tablespoons of rock sugar
