There's as many ways to make a gumbo as there are cooks, make it your own and add what you like. You can use local smoked sausage, fresh sausage or any smoked products that's available to you. This is an easy gumbo that can be made in a few hours with little work, follow this recipe and even a beginner cook will make you think it's from Cajun Country.
I used store bought roux to make it easy but if you want to learn to make a roux I have a video with easy steps.

The Mirliton's came from www.lilbitsofh... They are a staple in Louisiaina cooking. A Mirliton is a Chayote squash found in most supermarkets now but the Louisiana strain is bigger then the Mexican type.
Chicken and Sausage Gumbo
6 Quarts of water or chicken broth
4 heaping TBS of Savoie's Roux
1 TBS of Cajun seasoning
1 large onion diced
1 bell pepper diced
1 whole chicken cut up
3 links of Andouille or smoked sausage
3/4lb of pork Tasso(not required) or use smoked turkey necks
Bring water to a boil and add roux, stir to mix well and let cook on a low boil for 5 minutes
Season roux and add diced vegetables and let cook 10 minutes
Cut up sausage and tasso into bite sized pieces and add to gumbo, let cook for 20 minutes
Add chicken and cook till tender, usually about 30 minutes
Serve over rice with a side of potato salad
