My kid always requests these super easy customizable pancakes - you can make them any flavor you want, as high fiber and high protein, gluten free or vegan - its you're pancakes to eat!
Ingredients (makes 12 small or 6 medium or 4 large pancakes)
-3tbsp melted butter or vegan butter
-1 egg or flax egg or 50ml vegan egg replacement
-1tsp extract: vanilla or almond or lemon or ube or mango (pick your fav)
-2.5tbsp baking powder
-1.5 cups all purpose flour or gluten free flour or 1cup oat flour +2 mashed bananas for higher fiber
-1 1/4 cup milk or soy/almond/macadamia/pea/coconut mylk
*optional addins:
-2tbsp ground flax
-2tbsp hemp seeds
-3tbsp protein powder of choice
-1tsp oat germ
-1cup frozen blueberries/raspberries
-1cup chopped nuts: macadamia, pistachios or pecans
How to
1) Mix melted butter with egg, add in extract, baking powder and mix well
2) add in flour (or flour+banana), optional addins and milk/mylk, whisk well - small lumps ok as they'll settle out as the pan gets hot
3) lightly grease a non stick frying pan on med, scoop 1/4cup portions (for small pancakes), 1/2cup for medium pancakes and 3/4cup portions for large pancakes. cook 2-3min until golden and top sets with bubbles - flip and cook additional min or 2 till its also golden brown.
3) repeat with remainder of batter, turning heat down to med low if pancakes getting too brown before cooking all the way through.
4)enjoy with chocolate chips, extra nuts, whipped (coconut) cream, fruit syrups, fruit preserves, cut up fruit etc!
