*EASY* How to Smoke a Chicken on the Weber Kettle Grill | Beginner BBQ Tips | Barlow BBQ

If you're just starting out on the Weber Kettle, we've got some beginner BBQ tips on how to smoke a whole chicken. This recipe is really easy and delicious. Your chicken will turn out tender, juicy and with perfect bite through skin. Great for an easy weeknight dinner. Full recipe is below!

BARLOW BBQ CHICKEN RUB
2 tbsp paprika
2 tbsp kosher salt
2 tbsp brown sugar
1 tsp chipotle powder
2 tsp garlic powder
1/2 tsp ground mustard
SMOKED WHOLE CHICKEN RECIPE
Olive Oil
Barlow BBQ Chicken Rub
1 6lb whole young chicken
Brush the surface of the whole chicken with olive oil and then season with Barlow BBQ Chicken Rub or your favorite rub.
Fill a charcoal chimney 3/4 to all the way full with charcoal and light. When charcoal is ready, add evenly to two charcoal baskets, and add some chunks of your favorite smoking wood. Cover and let grill temp climb to 400 degrees.
When grill temp is ready, add chicken and smoke indirect until internal temp of breast reaches 160-165 degrees. Remove, slice and serve!

You know what?? I have been watching video after video of how to best use a weber kettle and this gentleman hits it out of the pak. No nonsense real world bbq. I am not trying to win world BBQ pit master. I just want to have good BBQ as a regular working man who doesn't have all the time in world to learn fancy techniques. Awesome videos Mr. Barlow. I learned alot for sure.

I bought this as my first propane grill. It's been a fun, learning experience ru-vid.comUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I think it's a bit too pricey after looking at other grills, but it wasn't hard to put together and it works really well. I love the side burner option for heating food during a power outage. I have an electric stove and live in the South (Hurricane season), so this was a bonus. I also bought a cover for it and it has protected it nicely (the Char Broil All-Season Grill Cover 3-4 Burner: Large). Every few grill sessions, I take the rack (or grate) and burner covers off and clean them with a non-abrasive scrubby and mild soap. I wipe the excess off of the bottom as well, taking care to avoid the gas and pilot lines.

I have been using this method for over 30 years. I use two chickens and put pierced lemons in each one to help keep moist. I put a little more charcoal on each side and it’s done in a little over an hour. It’s my family’s favorite meal!

Nice smoked chicken. This is smoking chicken 101. This is a great instructional video for those who just got their first kettle and need help. We take knowing how for granted, but there are thousands coming on the scene with their first kettle with no experience. Great job.

Looks good! I've cooked many chickens on covered grills. Hard to screw them up. It takes longer, but I stuff them with stove top. The butter in the dressing serves to keep the bird moist.

This recipe is dead easy and dead awesome. Have made it nearly every week during quarantine. Definitely getting near mastering my BBQ skills thanks to videos and you tubers like Barlow (and also working on mastering my drinks! Smoky margarita, watermelon martini and old fashion definitely nailed and cahpirinia next!)

I made a version of this tonight. Used food lab's Peruvian style rub on 4 lbs of skin on thighs. Lined them all up right down the middle with the side by side baskets as you had it, and came out great. Hit 400 F grill temp using a full chimney of charcoal, done in about 40 mins. Thx for inspiring me to cook tonight.

I just copied this style of cooking on my drum style BBq. Couldn't maintain 400 but did maintain about 375-380 for an hour and a half. 20 minutes to rest and holy $hit that was great. Thanks for helping my bbq/smoking journey

400 seems a bit high, when smoking chicken they usually say 275 to 350.

Cooked a whole chicken on my Kettle at the weekend and it is the nicest chicken I have ever eaten. It was so moist, all the way through and had that lovely smoky flavour off it. A temp reader is crucial for this because if you have a bigger chicken, it's going to take longer. You need to get your temp right.

Sauce would have been a great call, but I really wanted to keep this simple in the hops that folks could adapt and add however they wanted. Rain just stared here in Western NC from the hurricane. Under a flash flood warning but we live up on a hill so we should be just fine. Hangin in there! ✌️✌️

Yeah I was thinking since I was aiming this one directly at beginners would be more appropriate to use the baskets as they would most likely have them. It’s a tough call sometimes when I’m making vids! ✌️✌️

Man I really wanna try this but I don’t have a grill thermometer or one on my Weber. I also just can’t really set aside money for one right now. Stoked to try it eventually though. Thank you for the video

You know what, you don’t have to have a grill thermometer to make this. It’s a handy tool but by no means a requirement. If you’ve got a charcoal chimney, fill it up halfway to 3/4 full and light that. That would be a good amount to get the heat up in your Weber. Also keeping both bottom and top vents open. Just keep an eye on the temp of your chicken as it cooks so you don’t dry it out. Hope that helps, and we really appreciate you coming by! 🤙

I love this video. I just bought my second weber kettle and it’s been over 40 years since I’ve cooked on my first one. I also have the charcoal coal baskets . The basket is brand new, the kettle is an old one I got from Craig’s list. Haven’t cooked on it yet, but I’m going to be doing chicken on it mainly. Thanks for sharing.

Great instruction. If you could give me a little advice. I have a 18” jumbo joe weber kettle. Can I close the vents to half on top and bottom and let the chicken go another hour or is it because it’s poultry it should be done at high temp with vents fully open? Thanks 🤙🏼

Great question, Nick. You know, honestly it’s really up to you as to how open or closed you want to set the vents. Closing them down a bit will lower grill temp and make for a longer cook. We just prefer to smoke our chicken at higher temps so we leave the vents open. Experiment with both and see what you like best! Thanks so much for getting in touch! ✌️

This looks really easy! Thanks for sharing! I do have a question about smoking. I’m always worried about when to add the wood to the coals, too early and you lose the smoke, too late and your meat gets the dirty white smoke. I use wood blocks. Do you have any tricks on when is the right time or temp to put the wood on the coals?

What would happen if you cooked it in the middle of the bottom grate? Was wondering if it would be more crispy? Looks great though. I want to do this in a few days on my Weber. Gotta pick up some Kingsford first.

That looked good to me. Except 165°F is a little low for me now days but acceptable. Your rub recipe looks great. Martha was AWOL? I noticed the loose handle at 2:55 mark. Min did that recently too. Easy fix, the old welded on handles, prior to 2015 didn’t do that often., However, if on the very rare occasion they did there was no easy repair. Hope you survived the hurricane OK!

Martha was at work the day I filmed, was hoping she’d be back in time for a taste test, but she did get to try it later on and she loved it. As for the handle, yep lost one of the washers that attaches to the underside of the screw to keep it attached. Looking for a replacement 😞 Rain came in early this morning and will be with us today and through tonight. Shouldn’t be too bad though, we live on top of a hill so no worries of flooding and our house. 🤞🤞

Damn good looking chicken! If u truss the legs and wings they will cook more evenly with the rest of the bird. Just a little tip. Look damn good either way!

I’m new to Weber Kettle bbq’ing. What do you have the bottom air damper set at? Follow up question, what is a good standard position for the bottom damper?

That is a great question! I typically close my bottom vent to about 1/4 way open once the grill temp is closing in on where I want it to be. If it holds, I'll just leave the top vent open but if the temp keeps going up, I'll close the top vent about halfway or more. I've heard a good way to think about the vents is that the bottom vent is your gas, and the top vent is your brakes. Your best bet is to just play around and experiment. You'll get the hang of it! 😉🔥🔥

No such thing as a dumb question! If you are using wood CHUNKS, no need to soak. Toss on a chunk or two and let it rip. If using wood CHIPS, yeah you could soak them for a little bit first. Otherwise they would just burn up immediately. Wood chunks are much more robust because of their size so they'll just slowly smolder and smoke for quite a while. Remember pre-soak your wood so it won't burn to fast and also help for black smoke we don't want black smoke only clear white smoke for flavor the black smoke will give it a harsh smoke flavor

Once the charcoal is going and the wood is on, put the lid on and give it about 10-15 minutes for the black smoke to clear up. Then you can go ahead and put the meat on. 👍

Hi! My master touch kettle is coming tomorrow, meanwhile I'm checking out some tools to buy and I have a question for you: theese kettles have a thermometer but you use an extra thermo to keep track of the heat in the chamber, aren't build-in thermometers reliable? I was about to buy on Amazon a single thermo for meat just while checking out this video so..yea I thought, better ask them first! :)

Hi Ivan, that’s a great question! So, the thermometer that’s built in to the kettle IS reliable and works just fine. BUT. The thermometer is on the opposite side of the lid’s top vent. When I smoke/cook indirect on the kettle, I place the lid with the top vent over the meat/indirect side, therefore the thermometer will be directly over the coals. The thermometer reads true, but it is showing the temp for the coals which are directly beneath and that temperature will be much much hotter than the temp over on the indirect side with the meat. That’s why I use another thermometer because I want to know what the grill temp is on the indirect side, not the hot side. Does that make sense? If Weber put their thermometer on the same side as the vent, I wouldn’t need to use another thermometer because it would be on the correct side that I need to watch. @@BarlowBBQ yes It makes sense, you're right. So the perfect thermometer is the one with 2 sensors, right? One for the chamber and one in the meat so I don't even need to open the kettle to check it. I guess that's the best thing to have. Sorry for all this but here in Italy we have a very different grill culture so I'm very ignorant about low n slow 'American way' to do bbq! Many thanks 😀

You use a digital thermometer but it seems like the kettle has one build in, was the kettle thermometer at the same temp?

You are correct, the kettle has a thermometer built in on the lid. BUT when cooking indirect like we are in this video, I set the lid so the vent is over the meat, thus the lid thermometer is over the coals. That means that the temp the lid thermometer reads would be MUCH higher than the temp on the side of the meat because the thermometer is over the hotter coals. Make sense? Great question!
