My mom absolutely loves Keylime so I switched the lemon ingredients for key limes. I squeezed and zested them myself LOL! I usually make stuff from a box so it made me feel like a real pastry chef LOL! It was absolutely delicious. I made a double batch of the filling and put it in a 10 inch spring form pan. I made the same amount of crust as the recipe calls for. She could not believe it was sugar-free, low-carb and gluten-free. Yummmmm!!! Thank you for this awesome recipe!! ❤️❤️❤️
I LOVE lemon bars! It’s amazing how you really don’t miss out when you do a lowcarb, sugar free lifestyle. When I first did Atkins when I was 18 in 1992, there wasn’t much in the way of recipes. We made sugar free jello and topped it with heavy cream that we whisked up in a cold metal bowl. That was my Mom & mine’s dessert back then.🥳😂

I like how you wrote Resurrection Day instead of Easter. Resurrection Day sounds more about Jesus. The word Easter, makes me think of bunny rabbits, easter eggs and candy.

Yes I do love lemon 🍋 and tart. I used to love eating chocolate chip cookies with lemonade instead of milk. Lol When I was a teenager, we had a lemon tree so I would make homemade chocolate chip cookies and lemonade with ice and have at it. Now I wonder why I have sugar issues 😂

Dang I can’t post a pic! I was thinking I needed something raspberry lemon in my life and I seen this.. Currently in the oven.. I added 4 Oz of cream cheese and sunk fresh raspberries in the filling. Thank you for the recipe... even though I messed up and ended up with all the filling ingredients in a bowl which I then dumped in a pot all together wet and dry lol it still thickened.. lucky lol ty :)

Your instructions were so easy to follow... The lemon bars turned out great even without the gelatin. The crust alone makes a great cookie! I also crumbled the parchment paper as noted by some of the reviewers and it worked out great as well. I'm looking forward to trying more of your recipes! Oh, and I just subscribed. Thanks!
