This is hands down, my favorite cooking channel. I grew up on broke-ass recipes. As a kid it seemed unfortunate and embarrassing, but it ended up being wildly valuable later on in life. Not the recipes or ingredients specifically, but the mindset. If you can self sustain, you'll never be beholden to anyone.

Wolfe, I'm a bit younger and don't have a wife or kids, but I relatively recently broke my pelvis in a foreign country, and spent a decent amount of time in the hospital, mostly isolated. Love your attitude! My mother had a variant on a SOS recipe that I still eat to this day. We call it Creamed Tuna on Toast. 😋 1 can of drained tuna (any style) - put it into a pan with a little butter and break up. Use the time in the pan to “dry” the tuna a bit. Add milk, salt and pepper and some flour, (not too much flour, you want it creamy and not pasty). Stir until thickened and pour over buttered toast. Easy peasy and a deliciously different taste. I think you’d enjoy.

If you're really tired or lazy you can make it by mixing one undrained can of tuna in water with half of can of your favorite cream soup. I use mushroom. Stir and put in nuke for a minute or so while your bread toasts. Warm meal in about 2 minutes. If you're using pouch tuna you will have to add a couple of tablespoons of milk or water to it.

Adding a little bit of cayenne or mustard to your bechamel (roux+milk) is also a good flavor boost that nicely compliments the mac and cheese. You can also add some beaten eggs to the mornay sauce to make it even creamier and heartier in the finished casserole, just be sure to wait until it cools some and stir very well into it so they don't scramble.

A better method to add egg yolks ( leave out the whites ) to enrich is to place the egg yolks in a small bowl, have a whisk ready, then ladle in one ladle of mornay sauce and whisk immediately, then add back to main sauce and stir or whisk in. Works amazingly well!! I do a dish I call "snakebite chicken alfredo" Like this. I've had people run up 3 flights of stairs to get some :-) the "snakebite" is chopped jalapenos or habaneros, and the chicken is cooked with a dry spicy rub.

It's a Béchamel sauce. Easily made into a mornay sauce by adding cheese, any kind really, or add breakfast sausage to make sawmill gravy to pour over toast or biscuits. Easy to make with many many uses, a wonderful sauce. What you have there with just the ham and sauce, add potatoes, cheese, green onions, and maybe sour cream for loaded potato soup. Green onions buy em once, trim them for cooking, plant the roots, moar green onions, profit. Start a garden for that matter.

I am positive this man has spared many a child from going to bed hungry by teaching families how to cook these budget meals. Please never stop good sir! If I'm not mistaken the Dr. Seuss thing was I think 2? specific books that the publisher self-pulled without outside pressure because they either contained a racial slur or a super offensive sterotype (like the slanted eye buck-toothed "asian man" caricature) and they also happen to be some of the least-popular books that were hard to find in the first place. Not things like Cat in the Hat, The Lorax, ect. The media just blew it out of proportion. I do think it was the wrong call. I think the Loony Tunes approach is better "this may contain old views/steotypes that are offensive today, but erasing history is bad" or some such, and just presenting the material as offered. The woman who freaked out at you needs a damn slap. I'm an atheist and I don't care if someone says "god bless you" or "merry christmas" or any other polite statements just because they contain a religious word, for goodness sakes people.

My fiancé can’t tell the difference between wolfepit and chef John. Even though they have completely different accents, cook completely different things, and have different kitchens and music. We the people love your videos, stay safe and healthy!

@@TheWolfePit 🤣 I don’t get it. The only similarity is all you see is hands and food, maybe that’s it. I’m glad you’re back home with your family sir, stay blessed.

Great picture and good looking casserole. I just have to cut it down for one person. Love your videos, take care and keep the recipes coming.

Why cut it back unless you don't eat leftovers. I make casseroles that size for me and get several dinners, couple of lunches. I cook a whole chicken for me and get several different meals with it

@@mariafulton1213 I have no problem with leftovers, but very little freezer space, so I wouldn't want the same dinner for a week. I don't eat breakfast and rarely eat lunch. If I open a jar of sauce, I look for different recipes to use the rest for. I can't afford to waste food and can be rather creative. Answer your question?

For your flip flop recipe, I'd definitely suggest using ones made of leather or rawhide. Some are made of plastic and foam, and those aren't going to be digestible, but there's plenty of history of people cooking leather when times are tough. As for the sauce, I believe the real name is bechamel, but my grandfather used to call it milk gravy.

I'm going to try this sometime this week but for tonight, it's fried pork chops with fried potatoes and turnip greens with pineapple upside down cake for desert. LOVE YA!

Some diced jalapeno, Worcester sauce, de-moldified cheese grates, a touch of tarragon, some anchovy paste and just a hint of cinnamon might work for the flip flops. Braised of course. In that water that's left over from boiling cabbage.
