PINEAPPLE MUFFINS
2 cups all-purpose flour
2 tsp baking powder
½ tsp salt
½ cup butter, softened
1 cup sugar
2 large eggs
1 ½ tsp pure vanilla extract
1 (8 ounce) can crushed pineapple, undrained
Preheat oven to 350 degrees. Line 12 muffin cups with paper baking cups.
Sift together flour, baking powder and salt then set aside.
Cream the butter and sugar until light and fluffy (about 5 minutes). Beat in the eggs one at a time, then add vanilla. Stir in the flour mixture (don’t overmix). Fold in the pineapple.
Using spoon, scoop batter evenly into muffin cups (about ½ full). Bake for 25 minutes or until muffins are lightly browned on top. Remove muffins from pan and place on cooling rack.
We like to eat right out of oven, sliced in half with butter!
Store leftovers at room temperature.
Recipe can easily be doubled!
