Hey Chef Chris…why not use Korean soya sauce instead of the Japanese soya? Korean soya sauce is SO delicious and different! And the chicken marinade should never be added to the chicken you’re cooking because it has the juices of the raw chicken in it and that’s no bueno. You can cook it separately and reduce it to a sauce but never add it to the chicken that’s cooking.
I need this in my life… soy garlic is my fave flavor. Can you make a vegan or non-shellfish kimchi? I like kimchi but I get the non-shellfish version since I have an allergy.
