I have a tree full of key limes and two vines just full of ripening cherry tomatoes. I see this salad in the near future, and maybe on a daily basis! Great recipe Chef!

I tried this back when the video was posted and it was delicious. Had some leftovers so I popped it in the freezer. Took it out today and threw it in a pot with some cream, hit it with the immersion blender, and it made for a very tasty soup to go along with my grilled cheese. Gave me an idea: elote soup??? Mmmm

I made this yesterday. I recommend making it when you know you'll have enough people to eat the whole thing in a single day because it made quite a lot and lost a lot of liquid/taste overnight in the fridge. Best at room temperature or a little on the warmer side from the corn.

I've never eaten a salad before as far as I'm aware, while I like greens, something about dressing and other facets that make a salad a "salad" have never clicked with me. Something about this process seems so nice and appetizing, I'm gonna give this a try!

I agree ! I would like to see his favourite version of the butter chicken recipe By the way, I remember a recipe from a local Indian restaurant. It was made with rice and dried grapes ! Any ideas of the recipe ?

@@JohnHausser it should be Ghee Rice or Kashmiri Pulao.... they are awesome.. try Ghee rice, simple but wonderful recipe..! Kashmiri Pulao is a bit complicated but it comes from a very special place of Kashmir High Up in Himalayan Mountains..! When I was there I ate that dish in a restaurant which in in Apple Garden at high altitude.. more than 3000 Meters above sea level... With snow claded high mountain peaks around!!. But any how.. Search for Ghee Rice... It's made with Clarified Butter and Raisins and Cashew..! Awesome but simple one.

I typically oven roast in the husk. Then peel and char on the grill. The grill burns the hairs off

I didn’t expect to like it as much as I did because I don’t like many of the vegetable dishes I’ve tried, though I haven’t tried many. This is one of the best tasting things I’ve ever eaten. It was so satisfying

Great salad thanks. I do a very similar thing, the two things I add which really lift it, are strawberries, if they are in season, and toasted nuts. I typically use pinenuts, but any toasted seed or nut will do. Obviously, if you are sharing in a group, exclude the nuts unless you are certain someone with allergies won't sample it.

I did the microwave corn last week. I tried the method of cutting off the bottom 1/2 inch of the cob, then slipping the ears right out of the shucks. It worked a charm! No contact with silks, perfectly clean ears.

Kenji, I always love your videos and can't wait for the next one. And, I love seeing the dogs! I would love seeing your daughter and wife, but I totally respect you for not putting their pictures on social media. I didn't think I would be interested in this salad, but now I can't wait to make it. I can see me adding capers. I have been cooking my corn in the microwave for years. I agree it is the best way. I cook it for four minutes. It is amazing how good it is and how easily you can shuck it. The silk comes right off with no problem. Will never boil corn again. Thanks for all the tips and tricks.

I just want to commend Kenji on his support of a cause such as No Kid Hungry. No matter where any of us are in our own lives I think we can agree that children are going to be caretakers of the future for not only our society but also for our planet. No one can be at their best on an empty stomach, and where their next meal comes from shouldn't have be on anyone's mind much less a child's. Lets give kids the best chance at success that we can by making sure they are well nourished and can grow strong bodies and minds. You may view that task as the job of the parents but we all know that there are parents out there that lack the means, or even the desire to provide the right kind of support. Regardless of what mistakes a parent has made, children are innocent and no child deserves to be hungry.

This salad is great! I've made it three times already this summer. only slight modifications from what is shown: Grilled corn instead of microwaved, cojita instead of feta, and lemon instead of lime. Another fun addition I tried on my third attempt, bacon pieces.

Really nice salad, simple & not mucked around with. Reminds me of an "American salad" I made when some friends from America were visiting a few years back. Made only with fruit, leaves & vegetables that were native to the Americas. Unfortunately I couldn't find any of the South American cheese I wanted, even though we produce a huge amount of styles of cheese here in the UK none of them are from or copy those directly so it was feta I used in their place. Only found your channel recently, but enjoying it a huge amount. Hope you all had fun at your picnic.

It's about time to state: from hearing your name mentioned in about every cooking yt video I watched until actually watching YOUR videos, it took me far too long. Love the way how you always explain the ingredients' "role" and name alternatives for most of them. This salad was really great, I mixed some basil and mint and added some baby spinach. Btw, I almost had written this comment BEFORE making the salad - microwaving the corn worked so amazingly, I was tempted to write already after step 1, so to speak. ;-) Thank for all this amazing content and take care!

This reminds me of something called Corn Bhel which is a variant of the popular Indian street food called Bhel. Traditional Bhel uses puffed rice, and fried lentils but the "healthy" version of it is done with corn. The other ingredients are similar, red onion, tomatoes, coriander leaf, and lime juice.

I didn’t comment before but the day you posted this video I had just been wanting to do a corn summer salad for a small family bbq this weekend and this appeared with everything I could’ve asked for :’) I’m commenting now bc I was just watching along as I made it this morning and it’s sooooo good & easy. i loved this, truely a summer salad xd, i ate it and it felt like summer :D i used parsley instead of basil cuz thats what i had and i added sumac. (my dad and sister werent fans tho, so be careful who you are serving it too i guess) edit: it was even yummier the second day. i was worried about how it would hold up with the cheese and onion and there, but its was great! i threw some pickled onion and spicy corn chips in to switch it up! def gonna make this again

Off season we usually buy Campari tomatoes which taste great. They look a lot like what Kenji is using.

Some fresh cherry tomatoes from the garden would work in place of those tomatoes. Perhaps even vinaigrette of some kind with the citrus.

When you explain why you microwave your corn it makes perfect sense scientifically but hearing that someone like you uses the microwave for corn really blew my mind for a minute hahaha. I'm gonna have to try it for sure.

The microwave is also really good at steaming other veggies, I believe he actually calls it micro-steaming.

@@rileywebb4178 yep! One of Jacques Pepin's favorite methods for cooking asparagus is in the microwave. Just goes to show that chefs will not hesitate to use ALL of the tools at their disposal.

The microwave is a fantastic tool for vegetables and quick breads/cakes, among many other things. Check Kenji's recipe for eggplant parm (or another eggplant recipe?) on serious eats. Microwave is best way to get eggplant less soggy

I've got the same microwave! Wonder what your love/hate about it is Kenji. Was weird getting used to not putting in the timer like the old fashion way.

It’s fine. I way prefer a microwave with an analogue power dial and timer. That’s all I need. Same with ovens. Too many damn buttons.

I made it. It's good. Used 4 roma tomatoes, maybe 6. Is better. The chunks of basil bit back so less basil for me next time 😖

I am so shocked by the fact that your corn is actually starting to come in right now. Here in the Midwest, the phrase for corn is 'knee high by the fourth of July' meaning that's what it needs to be at in order to harvest in August. I know the country has different zones and growing seasons, but here in MN we could get snow tonight after a week of 80+ degrees. We're nowhere near having garden fresh vegetables! 😂 (Mostly, not counting asparagus and rhubarb, etc.) But I look forward to trying this recipe in about 3 months.

Some finely chopped chennai cucumbers, some kashmiri lal or tikka lal chilli, and unwashed onion, and this is literally what I make when I need to fill up but not add calories, minus the corn of course.

Allergies can be an immune response to certain proteins. They change shape on cooking.

I'm sincerely curious because I am simply not well-versed, but what allows you to eat corn once its cooked versus while in its raw state? (regarding your allergy)

Could be wrong, but I think it has to do with being allergic to certain kinds of pollen. When the corn isn't cooked it has some proteins(or sometging else?) that ressemble the pollen, but it when cooked those proteins are degraded (I think)
