Kim, I have to applaud you because you just had two babies not one but two and you come on these videos upbeat, positive attitude and the energy is just off the charts I'm not saying you shouldn't be this way I just figured you would be a bit tired, but you may just make videos when you have spare time and when the babies are sleep. 1 can whole hearts of palm (halved and shredded) 1/4 tsp lemon pepper 1/4 tsp kelp granules 1/2 tsp old bay 2 dashes garlic powder Pinch of salt Water soften some rice paper and spread a THIN layer of the palm mixture. Fold over into a fish fillet shape. Dry Batter: 1/3 c flour 1/3 c cornmeal Same seasonings as above Coat fillet in dry batter and fry in hot oil on both sides until fully crispy. Set aside on paper towel (6 pieces)
Omg Kim!!!!! That vegan fish looked and sounded sooo good!!! Polenta is the Sicilian version of grits but I love it better than grits, I have seen it made with the little lamb chops and brown onion gravy it looked fire but I don’t eat lamb chops so I made it with smothered pork chops and let me tell you bussin!!!!!! 😂😂😂😂🥰😘

I’m honest I not a vegan but I will use those wraps now that I know you can fry them. I had a baby shower where they were used as spring rolls. As I was sitting here watching I almost jumped off the bed when I saw you could fry those. Also you look amazing Blessings to you and your family. This was very ingenious and very good. I might try with banana blossoms. I fried those up a few times but they didn't quite hold for me like I would have liked...this may be the trick 😊
Kim, corn meal, grit and polenta are all the same thing. White grits is just white corn I stead of yellow. Polenta is just yellow corn meal ground up more. In the south yellow corn is called corn meal mush. The course grind of corn meal taste better as grits. I see you bought both which is the same. You could've used polenta in frying since it's just cornmeal. I just wanted to say something since you said you used polenta instead of grits.
Watching you make these, it occurred to me that I could use that same technique with king oyster mushrooms to make chic'n tenders. If I try it and it's good, I'll let you know

However, your vegan meals are a great way to switch up when I feel like I need a reset. So, years ago, I discovered a mushroom lasagna that I love, love, love. I'm interested to see how you'd make it without using dairy for the white sauce and the parmesan cheese.
