I do those pretty often with almost same recipe. for the white I tried different ingredients including plant based milk or blended tofu but I achieved the best texture using my home made unsweetened soy yogurt, more smooth almost silky. for the yolk I use potato flakes never thought about pea protein, next time I will try with that. 😺
