Choux pastry (about 7 eclairs)
75g water
75g milk
75g butter
1 tsp salt
1 tsp sugar
100g flour
3 eggs (plus maybe a little more)
Pastry cream
5 egg yolks
75g sugar (1/3 cup + 1 tbsp)
25g cornstarch (2 tbsp + 2 tsp)
270g milk (1 + 1/3 cup)
55g butter (4 tbsp or half a stick)
Ganache
220g heavy cream (3/4 cup + 3 tbsp)
60g milk (4 tbsp)
220g semisweet or bittersweet dark chocolate (7 1/4 ounces)
