My tallarín verde recipe: • Delicioso Tallarín Verde
INGREDIENTS:
2 lb pork meat
2 red onions
2 stalks green onion
½ green bell pepper
6 garlic cloves
½ bunch cilantro with the stalks
2 tomatoes
3 limes
1tbsp vinegar
2 sweet plantains
Salt to taste
1 tsp pepper
1tsp cumin
1tsp mustard
2 tbsp homemade aliño
Vegetable oil
Olive oil
Water
Sides:
Mote
Avocado
RECIPE:
Cut the pork into medium cubes, with the fat and bones for more flavor.
Season the meat with mustard, salt pepper, cumin and homemade aliño.
Chop in medium chunks red onion, green onions and 5 garlic cloves to add in a pan to sauté with the pork meat and cilantro stems.
Cover with water and let it boil until the water evaporates.
For the onion salad, slice the onion in julienne, dice the tomatoes and chop a handful of cilantro, mix with salt, pepper, a drop of vinegar, olive oil and the juice of 3 limes.
Once the water evaporated, cook it in its own fat, moving it so it doesn’t stick.
Cook the sweet plantains in water for 5 minutes then fry them in hot oil.
Serve the pork with a portion of mote, the sweet plantain, and the onion salad. Optional add avocado slices.
