- 50g tapioca flour
- 10g gluten
- 1 egg + water to reach a total 216g
- 1 tsp vegetable oil
- 5g fine salt
- 4g baking soda
Ingredients for 500g flour (for 4 to 5 people)
- 330g bread flour (T65)
- 120g cake flour/plain flour (T45)
- 41g tapioca flour
- 9g gluten
- 1 egg + water to reach a total 180g
- 3/4 tsp vegetable oil
- 4g fine salt
- 3g baking soda
Ingredients for 400g (for 3 to 4 people)
- 265g bread flour (T65)
- 95g cake flour/plain flour (T45)
- 33g tapioca flour
- 7g gluten
- 2/3 egg (about 35g) + water to reach a total 144g
- 2/3 tsp vegetable oil
- 3g fine salt
- 2.5g baking soda
Ingredients for 300g flour (for 2 to 3 people)
- 200g bread flour (T65)
- 70g cake flour/plain flour (T45)
- 25g tapioca flour
- 5g gluten
- 1/2 egg (~25g) + water to reach a total 108g
- 1/2 tsp vegetable oil
- 2.5g fine salt
- 2g baking soda
