On my first attempts the noodles would break up too much. I finally found a good balance and I am now satisfied, with this recipe the rice noodles don't break up any more and they are very yummy :-)

Ingredients (for 4 to 5 people):
- 332g rice flour
- 160g tapioca flour
- 8g xanthan gum amzn.to/3xrlHxk
- 8g fine salt
- 280ml boiling water
- 2 tbsp vegetable oil
- 2 tbsp lemon juice
* in this case adjust the microwave time to 1.5 min
Ingredients (for 2 to 3 people):
- 166g rice flour
- 80g tapioca flour
- 4g xanthan gum amzn.to/3xrlHxk
- 4g fine salt
- 140ml boiling water
- 1 tbsp vegetable oil
- 1 tbsp lemon juice
*Microwave 1 min

Hello, I used corn starch instead of xanthan gum and potato starch instead of tapioca starch and it gave me the same one in the video thanks for the great recipe 🥰😍✨

Bad ass noodles. I was very sceptical that this would work, but it produced a pile of nicely chewy noodle. These are going to be perfect in soup this week. Well done!

I just bought. This machine and didn’t find the Phillips pamphlet detailed or helpful. I noticed I let the dough sit out for a while and it was more together. Thanks so much for the tip to mix first, cook, let it set and then use the Phillips. They make it sound so easy. But there are extra steps! Thanks so much! I never thought of making my own rice noodles but am excited to try!

It was abit complicated to make rice noodles with philips pasta maker because the noodle was easy to cut off (fragile), I was happy to find the way to make rice noodle not so fragile with this machine☺

Potato starch in a shaker. How smart is THAT?! It's BRILLIANT! I'm going to use shakers for starch and for flour from now on. Thanks for sharing your technique.

I’ve tried this recipe and it turned our wonderful! tq! i hv a new question, can i freeze them. if so do i cook them and freeze it OR do I dry it a bit (like pasta) before i freeze them? TQIA fr your tips!

Hello how long did you boil the noodle? When you stir fried it, did the noodle break off easily? And what kind of disc is this? Thank you

Cooking time : I did not time exactly but probably 2 to 3 min. Then I checked directly if they are cooked and if the hardness was to my taste. Breaking : The stir frying did not break them. It was one of my targets working on this recipe. Having said that rice noodles are fragile compared with wheat and for instance if I re-heat several times the stir-fry for my kids then it would break. Disc : 1*6mm sort to fettuccine shape 😊

I did not try but if you add more tapioca flour and less rice flour, it might be more chewy...

Hello, it is fresh noodles, so about 5 to 6 min, just try a little bit of noodles bofore you''ve done to check if they are ready? Because it is also depend on how much quantity you gonna boil...🙂

How long does it take you from start to finish making this recipe (minus cooking/blanching noodles)? Would like to know how clean up is too? I have a kitchenaid mixer with attachments and it rolls too thin and only cuts fettuccine which is too wide.

For other noodles the Pasta *making* process takes 10 to 15min depending on the quantity. For this rice noodle the dough needs a bit more preparation so maybe it would be 15 rather than 10. It is not so long which is why I got hooked on this machine. Clean up is ok, tho it’s true there are many parts to do. Since I live abroad this machine really makes my eating life easier.

@@wasKitchen Thank you for confirming! I saw that a tablespoon is approx 15ml in US/UK but it is 20ml in Australia, so thank you for answering my question.

Hello, I don’t recommend you to replace it. Because the noodle will be very fragile…

Hello, I am not sure you can still have the same result as I did not try yet. Sorry... I feel it (to use microwave) gives more ststrength for the noodles.

Hello, If you don't use xanthan gum, the noodle will be fragile and it might cut easily... I have tried to make it without xanthan, but did not work😣

Hello, actually I have tried to make them without xanthan gum, but did not work... So having no acceptable substitute I tried to put as little as possible.

@@wasKitchen thank you for replying! Would you know the size of the noodle or disc you were using. My machine comes with Angel hair (has different pattern of holes from yours), spaghetti and thick spaghetti. I am thinking of ordering different discs from a Vietnamese source but not sure of the size. Angel hair size could be 0.7 to 1 mm and spaghetti can be 1.6 mm to 3 mm. Any suggestions?

Interesting 140ml of boiling water seems to make it dough into a homogenous mass instead of the consistency shown on your video where it naturally becomes small bits

my pastas borders are never this smooth, always a lot of marks on it whatever mold I use. It's kind of annoying. Do you do anything to make the mold smooth or it's just me? :p

Hello, I had a similar problem when making udon. I had bought a udon disc from a third party maker and the result was not smooth. Do you use the original disc?

@@wasKitchen had the udon mold from 3rd party as well because can't find the phillips one anymore. I see the same issue going with all my other discs as well and are not 3rd party built, probably because the water/flour ratio isn't correct for using the pasta maker. Usually it's like you, the first few centimeters needs to be put back in the mixer.I also noticed that when you reach the end of the batch, it's always smooth even for Udon. In other words, if the extrusion was a little bit less fast, everything would be just perfect everytime :)

I'm confused it's called rice noodle where in there is there any sort of rice. Wouldn't that be called tapioca noodles

Hi! Well, two thirds of the flour in the recipe is rice flour. Tapioca flour makes the other third and is only added for texture purpose. Hope you still like it 😊
