I was in Italy several years ago and had amazing eggplant "meatballs." I have been trying to recreate the recipe since then. Finally made this recipe and they are better than what I had in Italy! Made them for a dinner party and people were asking for the recipe. You are a boss!

I made these tonight. They turned out well. I think that I will sub provalone for the mozzarella next time and add some strongly flavored mushrooms. They benefit by dipping in tomato sauce. Yummy and easier than they look.

I love eggplant but only think of making parmigiana which takes so long, so I rarely make it. I’m always craving eggplant and love this simple and easy recipe. I could make a batch and even freeze some and use it like you said, with pasta, as an appetizer, etc.. just found you and am exploring more of your recipes. You do a great job showing how easy it is to cook with really, very few spices which is so typically of Italian food. I always have the staples, Olive oil, garlic, parsley, oregano and basil, and of course red flakes. Any combination of these can make a simple dish if plain pasta taste delicious. I recently discovered more ways to use anchovies and am going to see if you have any recipes as well. Thank you! Your accent reminds me of my Mama and warms my 💜 My parents both cooked, and all 8 kids, 5 girls and 3 boys also love to cook. In the boys family, their wives are not Italian and happen to not cook. But they have amazing chefs to cook for them.
