This recipe is the BEST Eggplant Parmigiana I've ever tasted. So easy to make and it's even easier to eat. Add some Italian red wine and some garlic bread and you will be in food heaven (until the pan is empty). Thank you Mr. Orsara. Salute! Che tu possa campare cent’anni.

Hi I have a question.. When you tried this recipe did you salt your eggplant first? I noticed that he didn't. Does this not effect the cooking process?

Trying this right this moment! I got hand picked eggplant from local farm and so far the frying part smelled very delicious 🤤 and after allowing it to rest on the paper towel I got a little taste of just simple fried and seasoned bread crum coated eggplant and it was delicious! Can’t wait to try the final product! Still got 14 minutes on the oven but so excited for my family to try this!

Made this dish today for my grandparents and they loved it! Couldn’t find pecorino cheese in my area so I used Romano instead. Still came out very flavorful and filling. I would definitely recommend this to others!

Looks like what my Momma used to make. She taught my wife to make it and it has been a family favorite since the 70s...well even befor that. Mom was making it back when I could barely remember in the 50s. Love the Eggaplant Parmigiana!
I love this guy!!! I plan on making this tomorrow night. I have never had eggplant before. I grew it successfully in my garden this summer. Now I will make it to try. I'm excited. If I don't like it, at least I have a bottle of wine to wash it down. But better to make it authentic.
