Elevate Homemade Chocolate Pudding With This Secret Ingredient

This video is a tribute to my late Aunt Joyce, who loved to get creative in the kitchen. She was even featured for her recipes in her local newspaper. The following recipe incorporates one of her favorite dessert ideas with my pudding.
Homemade chocolate pudding is classic comfort food. My recipe adds espresso powder, which not only complements the flavor of the chocolate, but boosts it without making it taste like coffee or mocha. It takes it to another level. So, let me show you how to elevate homemade chocolate pudding with this "secret" ingredient.
Ingredients:
1 cup sugar
1/4 cup cornstarch
1/2 tsp salt
1 TBSP espresso powder. I use the King Arthur brand: amzn.to/3woI4YP
1/2 cup cocoa powder
4 cups whole milk
1 tsp vanilla extract (I usually like to use vanilla paste, and this is my favorite brand: amzn.to/4255dvi)
2 TBSP unsalted butter
2 oz dark chocolate, chopped
1 sleeve of graham crackers
1 pint heavy cream + 1 TBSP granulated sugar
Cocoa powder and/or chocolate shaving for garnish (optional)
Method:
Place a single layer of graham crackers on the bottom of an 8X8 serving dish.
Set aside.
In a large, heavy-bottomed pot, add the first 5 ingredients.
Whisk to combine.
Place the pot on medium heat and gradually add milk, one cup at a time, until fully incorporated and smooth.
Stir constantly, bringing the mixture to a boil. This could take about 15 minutes.
Once boiling, continue to stir and cook for two more minutes.
Remove from heat and stir in vanilla, butter and dark chocolate.
Spoon half the pudding over the graham crackers.
Place another layer of crackers on top and cover with remaining pudding.
Smooth the top and refrigerate until very firm, about 3 hours.

After the pudding is thoroughly chilled, spread a layer of whipped cream over the top and garnish as desired.
