How To Make Lamingtons (Australian Snack Cakes)

This delicious Australian treat is named for Lord Lamington, Governor of Queensland from 1896 to 1901. And while I'm pretty sure m'lord never stepped foot in a kitchen (let along baked his own goodies), YOU can make these at home with very little effort. To make them even easier, we used a boxed yellow cake mix which cuts active time in half. Here's how to make Lamingtons:
Ingredients:
Packed yellow cake mix baked in a 9x13 baking dish
1 stick unsalted butter, melted and cooled to room temperature
3/4 cup whole milk
3/4 cup cocoa powder, sifted
1 1/2 cups powdered sugar, sifted
2 1/2 cups desiccated coconut, unsweetened
1 pinch salt
Bake the cake according to package directions and let completely cool.
Cut cake into uniform 2" squares and set aside.
Place about 1 cup of coconut in a bowl and set aside.
In a large bowl, combine butter and milk.
Whisk in cocoa powder until well blended.
Gradually whisk in powdered sugar, a bit at a time, until smooth.
Transfer chocolate mixture to a smaller, deep bowl.
Working one-cake-at-a-time, dip each square into the chocolate and, using two forks, gently turn them to coat every side.
Lift from chocolate with the forks, allowing excess to drip off.
Place the cake in the bowl with the coconut and coat. Replenish the bowl with fresh coconut as needed.
Place each finished Lamington on a wire rack.
When all the cakes are done, cool in the refrigerator for about 10 minutes.
