Hi, Charlie! Wow, your guest does everything! Politician, community activist, actor, etc...and running for office at 17 is impressive! Those grilled cheeses look amazing, especially with the caramelized onions. I agree that I don't normally like just plain tomato, but with balsamic, I would definitely like it. I will have to try sourdough bread the next time I make grilled cheese. Thanks for this great recipe and interview!

I love the fact that he did the elevated grilled cheese and talked about fixing grilled cheese regularly for his kids… I’ve most definitely made a ton of grilled cheese for my kids as well. This was an easy interview with Neil brimming with information and enthusiasm. No wonder he got involved in so many organizations as he is one driven human being. So refreshing hearing him talk. This is such a yummy meal and as you know, I would eat caramelized onions out of a builders shoe. I wonder how many people made this for lunch the day after watching it.
