Elk Loin Cooked Inside of Salt
Salt baked fish is fairly common. While there are some benefits I’ve always assumed the primary purpose was presentation rather than improved flavor. But either way we had to give it a shot and the elk loin I’ve had in my freezer was perfect for the job. The results were wild!

Will actually do the opposite: salt crusting like that will entirely prevent moisture from leaving the meat (and is usually done with chickens). You know how, after baking chickens, there's a bunch of renderings in the bottom of the pan? Imagine if that cannot leave the meat in the process of cooking because it's encased in salt: it just stays in the flesh and cooks in. That is why he is able to squish the loin and moisture just gushes out. It's also why the elk tastes like beef, because none of that fat reduced from the meat in the slightest.

So, salt encrusting things is a legitimate baking method, it essentially just turns the salt into an even smaller oven tight to the meat that then also seasons it and prevents moisture from escaping, but... They injected it with fat, stopped the fat from escaping, seared it in a way that would reduce minimal amounts of the fat, and then are displeased it tasted like fat. Dafuq were they expecting?

The best meatloaf I've ever had was freezerburnt ground elk, from either Oregon or Washington state, when I was a little girl, maybe 2 or 3. Try reverse searing the outside in the tallow. I do it with moose cuts, they are very similar. Also you keep the flavor of the cut
