There are a few that don't (I have a couple myself that make no mention of it) but I think it's largely to pay homage to the original (I believe) Eminem meme video that kicked it off the whole thing, wherein Eminem is trying to buy a car and ends up getting one without a floor or engine. It's a funny detail, so often ends up being used.
These fairy tales are so deeply ingrained in German culture, that phrases like "Ach wie gut das niemand weiß, dass ich Rumpelstielzchen heiß" and "Das hat dir der Teufel gesagt" are known by practically everybody.
Anybody else think the story doesn't make much sense? I mean Rumpelstiltskin asked for a necklace and then a ring the first two times, both of which are made up of considerably less gold than he produced from the straw. The girl could have just told the king what was going on and convinced him to cut her a deal-if he provides her with a single piece of jewelery, she will then use that jewelery to bribe Rumpel (whom only she knows how to summon) into making the gold. She wouldn't even need to tell the king about him, just ask for jewelery as payment. I have a strong suspicion that the story started out with the girl just failing to spin the gold and getting killed, giving the moral that her father shouldn't have lied, but kids were getting upset so they retroactively gave it a happy ending.
I always read it as Rumpelstiltskin wanted items with sentimental value, being that he could change straw into gold, riches and money meant nothing to him. The ring and necklace would mean a lot to the Miller's daughter, who wouldn't have had much wealth, but once she was queen riches mean far less to her, whereas a child would mean a lot, so Rumpelstiltskin desired that instead. That said, given how the tale has evolved over time I think your theory is perfectly plausible.

It understands Eminem's "hip-hop" conduct perfectly. I think it's having a hard time finding Eminem referencing Rumpelstiltskin bars. Lol. Seems like you chose the higher end machine so I'd just adjust the input. Even though, while having worked with several, I call bs and know it's being lazy. It's like I've seen the work you've done before, and your not hung over. I hung it up after the 1st time I said that though. 😂 Be careful with that kinda power. Either way it goes.
