Ilocos Empanada
This crunchy pastry is not your ordinary empanada because Ilocos Empanda dough is made of rice flour and it has a bright orange color. It is filled with grated papaya, mung beans, egg and garlic longganisa. It is the best to eat it fresh, warm and crispy and best paired with Sukang Ilocos.
Dough:
3 cups rice flour
1 cup water(more if needed)
1 tsp annatto powder/orange food color
pinch of salt
1 tsp seasoning mix(optional)
Filling:
1 cup mung beans
5 cups grated papaya
1/2 tsp pepper(more or less)
1/4 tsp salt(more or less)
1 tsp seasoning mix(more or less)
10 pcs. garlic longganisa
10 eggs(small)
Dip:
