So sorry for the loss of your brother. Anniversaries are so hard. I’m messed up all of August every year, that’s when we remember our daughter Kylee we lost at 33 weeks gestation. She’d be 7 years old this year. Glad you took some time for yourself to process and continue to grieve. Glad your back!!

I LOVE that you included meal prep/freezer cooking with this recipe! One tip for freezing the meatballs, put them on a cookie sheet and *flash freeze* them for an hour. Then you can put them all in a Ziploc and they won't stick together! If you just freeze the meatballs (fresh or cooked) everything will clump together. 💚
I love the addition of jalapeno cream cheese to the meatballs. I am sure it adds a good spice and moisture to the meatballs with the high fat content in the cream cheese.
