To be honest I was only ever going to make 3 epodes but your response has been amazing and so I am now filming episode four. On how Im going to make, prepare and delivery all the bacon that you guys want. It'll be out in a couple of weeks as Im still just getting started with everything

Enjoyed watching your videos on bacon. I've been doing homemade bacon for just over a year. No nitrites or nitrates. Just kosher salt, brown sugar and sometimes I'll add maple syrup for a change. I salt the pork belly just once, put it in the refrigerator and turn it once a day. After a week, wash off excess salt then put back in fridge over night. Next day it gets smoked in my smoker. Best bacon you can get. Beats the paper thin crap you buy in the supermarkets.

Having had some of that heavenly made bacon as a young man over thirty years ago I long for it!!! Wow you honestly did it justice!!! As many of my black friends would say “you put your foot in it”!!!!! It means made with a lot of effort and LOVE!!!! Fantastic my friend!!!

I saw you place the bacon in the top drawer but you showed the finished product on the bottom drawer. Did you move the product closer to the heat source during the smoke and if so why? Thanks for a great video. Im really motivated.

What is the purpose of wiping with malt vinegar before the “rest”? Does it affect the formation of a pellicle? I use your method with great results. Thanks!

Thank you so much for this video. I've been following the first episode on Busker Bacon. So yes it can be done using primitive equipments. Can I do this with lamb especially with butterflied leg of lamb? There's decent amount of fat on the leg but not so much. I'm going to try it anyway since it was free.

Wonderful! In the place where I live it is very common to smoke your own homemade bacon. However we smoke it for longer, maybe few days. And we use to eat it raw as it is (with mustard, pickles, etc) but also cooked bacon is very good :)

8:13 how'd you get the smoke from the pellets? Just heating them up? Did they burn? Was there white or blue smoke?

1. Man! You are awesome. That bacon looks out of this world! 2. Have you drawn some inspiration from Alex (French Guy Cooking)? The editing is very similar and the whole DIY wipe as well :P 3. Please send a pack to Alex and have him make a testing video. 4. What about asking a restaurant if you can borrow their vacum packer? :) 5. I would gladly pay for the bacon man. I do not want you to to run out of money or go broke or anything man!

Nice!! Would suggest slicing across the grain so is easier to separate when chewing off a piece. Those are some nice size slices.

Mate, I noticed you used the top drawer to put the bacon in. Four hours later you opened the drawer that was the second from the bottom. Question. Did you move the bacon down closer to the smoke as time went on or did I miss something? I watched a few times and there was no mention of you moving the bacon closer to the heat source.

You are right anyone can cook steak. I never said you had to be a chef to do so. My comment was directed to busker directly as a continuation of something I said to him before on a different video. Regarding the cooking part as a chef you have the ability to cook all kinds of great food. So when you make the wife or girlfriend mad you are able to cook them something and make they happy ha ha. A simple direct joke.

In texas we get pretty good bacon... I think its cured but they still use nitrates to prevent botchulism
