The permanent increase to fishing speed is fucking huge. Fishing is so tedious because of how slow bites are, so something that alleviates that permanently is very good.

Why is the mana regen upgrade called an aegis fruit? Aegises are a type of shield with some type of logo or icon on them, something you’d expect of the defense upgrade fruit.

Aegis means protection. It's usally affiliated with Athene or Zeus in form of a shield out of Goatskin.
