RECIPES:
Ingredients
4 eggplants
2 onions
Olive oil
4 eggs
Salt
Oregano
Pepper
Parsley
200 g yellow cheeses
300 g of feta cheese
6 phyllos
Method
We start by cleaning the eggplants and putting them in water with enough salt for 1 hour.
In the meantime, chop the onions and fry them in olive oil, while draining the eggplants, cutting them into cubes and sautéing them together with the onions.
When the onions and eggplants are soft, take them out and incorporate the eggs.
Add salt, oregano, pepper and chopped parsley. Then, add the cheeses and mix.
Next, grease a 36 cm baking pan, put 2 of the sheets, grease and put 1 more sheet.
Oil it and spread the cold filling. Continue and cover with 2 folded sheets and oil them.
Crumple up the last sheet, oil it, turn the edges inwards and oil them.
Finally, cut into pieces and bake at 200 C on the resistances until golden brown.
