Fancy Hash Brown Skillet
Ingredients:
1 small white onion, small diced
2 cloves of garlic, grated or minced
3 sprigs of thyme, leaves pinched off
2 eggs
4 potatoes, shredded and dryed well
1/2 c parmesan cheese
1 bunch parlsey, finely chopped
1/2 stick gruyere cheese, shredded
1/2 stick salted butter
fresh ground pepper
Preheat oven to 375 degrees bake convection.
In a cast iron pan, melt butter and add onions, garlic and thyme. Stir continuously. Once onions are carmelized, set aside.
In a large bowl, add 2 eggs and beat until creamy. Add potatoes, parm cheese, parsley and the gruyere. Start to combine and then add the onion mixture and salt & pepper and stir until very well combined.
Reheat the cast iron and evenly add the potato mixture to the pan and flatten. Cook on the stovetop for about 5 minutes to form a nice crust on the bottom and then cover with aluminum foil and place in the oven for approximately 40 minutes or until golden brown. Use a spatula to go around the sides and under the bottom of the potato when it comes out of the oven. Turn on to a plate or cutting board. Cut as desired to serve.
