Poke can be made with any fish, but at most restaurants, it's often made with Tuna or Salmon. I just wanted to show that you guys can make poke salad with snapper too. The key is to use chunky pieces, so a small fish probably isn’t the best for this recipe. Also, using bigger pieces won’t allow the fish to absorb too much sauce, so it won’t be too salty. Plus, bigger cubes will have better texture. You can also try using Sea Bass too as the meat is very similar to Snapper.
The key ingredient for poke is soy sauce and fresh fish. Everything else is up to you. You can even add grated ginger, avocado, cucumbers, seaweed, tobiko, etc. A bit of advice, try to use lite soy sauce if possible, or just add less of the regular soy. I think a lot of people make the mistake of adding too much at first and then it becomes too salty and kills the fish flavor. Go easy on the soy and adjust as needed.
Some people also use sushi rice as the base instead of salad. I’ve even seen nacho poke too. The important thing is to eat it with something neutral, because you want the poke to be the focus.
